| CHICKEN COUSCOUS (Yemen) 1 tablespoon oil 2 to 3 garlic cloves, minced 1 small onion, diced 2 to 3 pounds chicken parts, skin removed 1 cup couscous (millet may be substituted) 3 cups water 1 red bell pepper, thinly sliced 1/2 teaspoon cumin 1 teaspoon salt A few drops of hot pepper sauce, optional Heat oil in a skillet. Add garlic and onion. Cook for 2 to 3 minutes. Add chicken parts, couscous, water, bell pepper, cumin, salt, and hot pepper sauce, if desired. Cover skillet and cook on low heat on top of stove for 45 to 60 minutes. Check occasionally and add more water as needed.
