CARROT PUDDING (Yemen)  

12 tablespoons margarine, softened 
1 cup brown sugar 
1 egg 
1-1/2 cups grated carrots
Juice of 1/2 lemon 
1 cup flour 
1 teaspoon baking powder 
1 teaspoon baking soda dissolved in 1 tablespoon hot water 

Preheat oven to 350 F.
Grease a 9-inch square baking pan or a mold. 
Cream margarine. Add brown sugar, egg, carrots, lemon juice, flour, baking powder, and hot water with dissolved baking soda.
Mix together  well.  Put pudding in greased baking pan or mold. 
Bake for 30 to 35 minutes. 
Remove from oven and let cool a little before rmoving from baking  pan.
