Avocado Mayonnaise (parve/vegan)


One avocado
juice of 1/2 lemon
1/4 tsp sea salt
dash of cayenne pepper
1/4 cup olive oil

Put all ingredients except the oil in a blender, with the blender running slowly pour in the oil until emulsification occurs.You will probably have to stop the blender and redistribute the ingredients at first, but it should go smoothly.
This is wonderful on
sandwiches!
