| Asian Tomato Sauce
(parve/vegan) Serves 4-6 Ingredients -- � tsp salt 1 tsp thick soy sauce 2 tsp oil 1 tbsp curry powder 1 tbsp ground red chilli paste Coriander leaves, to garnish (optional 3 tbsp garden peas 4 cloves garlic, crushed 1 medium size onion, sliced 5 medium size tomatoes, diced into very small pieces 4 oz tofu, squared Fry tofu squares until golden brown; drain and dice into small cubes Heat oil in pan and add onion. Cook for 1 min or until soft. Add garlic and tomatoes and cook on medium heat for about 10 mins, or until tomatoes reach a pasty consistency. Add curry powder, chilli paste, soy sauce and salt. Cook for 5 mins. Add diced tofu and garden peas and mix well. Cook for 5mins. Remove from heat. Garnish with coriander leaves. Serve with pasta of your choice or with Asian egg noodles.
