Tankers have one purpose - to refuel other aircraft mid-flight, thus extending their range & endurance. Tankers are especially useful when the nearest friendly base to the combat zone is too far away for an aircraft to reach on internal fuel. IFR extends the range of aircraft by replenishing internal supplies. If a tanker is on station, combat aircraft do not really need to carry external fuel tanks so extra weapons or equipment can be carried.
