Lemon Chess Pie
1 Cup sugar
2 eggs
1/4 Cup Lemon Juice
Sm. can evap. milk
1 Lemon rind, grated

   Mix in all Ingredients
  Pour into 9" frozen pie shell and bake at 325 for 45 min.
  Additional: unfrozen pie shells may be used if using 10" pie shells,
suggest double recipe. may want to put Cool Whip, etc. on top for      serving
