1# Polish sausage, 1/4" slices (Hillsire Farms)
2 onions, chopped
2-3 stalks celery, diced
1 green pepper, chopped
1 cup chicken, cooked and cut into small pieces
1 cup ham, cubed
1 can (14oz.)diced tomatoes
1 jar Pace Picante Sauce (16oz.)pick your own heat
1 cup converted rice
1 cup chicken broth or to the consistency you like
2 tablespoons Olive oil
1 tablespoon Cajun seasoning

Saute sausage, onions, peppers, celery in olive oil until veggies are transparent and tender.  Add tomatoes, picante sauce, chicken, ham, broth and bring to boil.  Add rice and cajun seasoning return to boil and simmer until rice is done.
