All recipies with the [U.P.} come from the TV show Urban Peasant, which is a favorite of mine.
It is broadcast on CBC weekly afternoons.
Others are from family recipie boxes or other slowly gathered sources. Have fun with these, and enjoy!!
Sweet & Sour Chicken Thighs [U.P.]
Cut each one in half. (Use boneless for ease). Place in hot, dry fry pan with skin side down to cook. Cut red onion in rings and halved. Flip chicken and add onions. Stir. Crush salt, and chopped garlic together and add to pan with fresh ground pepper. Add ¾ C raisins. Take 8-10 green onions, and chop into 1" slices. Add white part now (takes longer to cook). Add 2-4 Tbsp maple syrup, some cayenne pepper, and a bit of vinegar. Add 2-3 tsp of mustard (try dijon with the seeds). At the last minute, squeeze grapefruit juice from ½ a fruit over all in pan. Slide out of pan onto a plate. Garnish with green part of green onions.
Pan Bread
1½ C flour
2 tsp sugar
2 tsp baking powder
1 tsp salt
2 Tbsp powdered milk
1 Tbsp melted shortening or corn oil
¾C milk or water
butter or bacon fat
Mix dry ingredients and oil (or short.). Make well in center. Slowly pour in liquid and mix to make a firm dough. Cook in pan or on tin foil with butter or bacon fat on pan. Cover is optionals when cooking. Great for camping trips.
Maple Syrup - Upside down cake [U.P.]
Use med to large fry pan that can go in oven too.
In fry pan, add ¼ C butter to melt, lots of nuts(walnuts, pecans etc.), 1 drained can sliced pears, and 1 C maple syrup. Boil away, and let caramelize.
In a bowl, combine ½ C butter, ½-1 C sugar and cream together. Then add ¼ C flour, mix till crumbly. Then add 2-4 eggs and mix well for each. Add 1 tsp vanilla, and 1 Tbsp (double acting) baking powder. (1st action in bowl, 2nd in oven). Stir fast. Add a bit of salt and mix. Pour mix on mixture in frying pan. Put pan in oven for 350 F for 20 minutes. Let sit for 5-10 minutes, then carefully flip onto plate. Serve with ice cream on top.
Coffee Cake [U.P.]
oven @ 350 F
¼C butter
½ C brown sugar
1 C flour
½ tsp baking powder
1 egg
½ C cold coffee (strong)
pecans &/or dates or fruit & nut of choice.
Cream butter, sugar together. Combine flour, baking powder and mix well:set aside. Add egg to sugar and mix smooth. Add cold coffee to sugar mixture. Add flour/bp*. Mix till all flour is in. Doesn't need to be even. Chop fruit/nut to medium. Dump in bowl, stir 2-3 times. Grease coffee can (or muffin tin) with butter. Fill can (tins) and cook 15-20 min or till toothpick comes clean.
*flour with baking powder together = self rising flour.
30 Day Friendship Cake Starter
1 ½ C apricot brandy
1 qt canned sliced peaches & juice.
2 ½ C granulated sugar
Combine in a large wide-mouthed glass jar or crock. Store at room temp. Stir once or twice/day for 10 days. Don't close lid tightly, or it may explode.
On day 10, +2 ½ C sugar, 10oz can pineapple chunks and juice. Stir daily.
On day 20, + 2 ½ C sugar, 3 jars (9oz) maraschino cherries, drained and chopped. Stir daily.
On day 30, drain off juice. This is the starter to give to friends and use for next batch. Save 1½ C to substitute for brandy at beginning.
30 Day Friendship Cake
1 ½ C drained fruit for each cake mix.
2 C chopped nuts (optional)
2 pkgs (2 layer size) white or yellow cake mix (with pudding in the mix)
8 eggs
¾C vegetable oil.
Use one mix to flour' nuts and fruit. In a large bowl, beat eggs well, add oil and beat. Add remaining cake mix and mix well. Stir in the floured nuts and fruit. Spoon batter into 2 or 3 greased and floured loaf pans, filling no more that ½ full. Bake @ 350 F for 60 to 75 minutes. Do not open door as cake may fall. Makes 2 or 3 loaves.
Apple Dessert [U.P.]
Fry pecan ½ s and raisins. Slice cored apple rings (thick), and place in bottom of fry pan. Gently cook till golden (must still be crisp). Sprinkle brown sugar and cinnamon, lemon zest, and maple syrup(opt.) Place on shallow bowl, dollop whipped cream over and serve.
...or with applesauce
put some applesauce in a bowl, add maple syrup, cinnamon, sherry (opt.), and stir. Pour over apples in pan. Place on shallow bowl. Add whipped cream in tower shape. Place raisins and nuts around. Serve.
Finnish Apple Pie [U.P.]
Take 3-4 apples, peel and slice. Put in water with a bit of lemon juice to prevent browning.
To 1 C sugar, add (½? C)butter and cream together. Add 2 eggs, cream after each. Add ½ tsp vanilla, touch of rum(opt.), add ½ to 1 C of flour, 1 Tbsp baking powder, pinch of salt, and mix through. Drop in dollups in greased pie plate, spread around to cover bottom. Place apple slices on top of batter. Bake at 375 F for 20 min until brown on top. (Check time so as not to burn)
Choco-Mint Parfait
1 pckg choc instant pudding mix
1 envelope Dream Whip.
1/8 tsp peppermint extract
colour opt. 2-3 drops red or green.
Prepare pudding. Prepare Dream Whip with peppermint extract (& colour if using). Layer pudding and dream whip in bowls or glasses. Serves 6-8
Chocolate Chip Meringues
Preheat oven to 425 F.
3 egg whits (no yolk)
1 C white sugar
1 tsp vanilla#
½ package choc. chips
(or as many as you want)
Beat egg whites until soft peaks form (2 min.) Scrape bowl while beating. Beat and add gradually sugar and mix at top speed until firm peaks form (2 more min). Stop mixer and fold in choc chips by hand. Drop from teaspoon on greased cookie sheet and put in oven. TURN OVEN OFF. Leave in for 3-4 HRS or overnight.
*FIRM means they will not slide out of bowl

Chocolate Truffles
100 g semi-sweet chocolate
¼C unsalted butter or ¼ C whip cream.
1 tsp liqueur-rum, brandy, any flavour
Cocoa powder
Melt choc gently stirring constantly till smooth. Cool, but do not let set. Beat butter till creamy. Stir in melted choc. and liqueur. Roll in small balls, then cocoa powder. Chill. Serve at room temperature. Makes 36
Mice - no Bake
4 oz semi-sweet chocolate
C sour cream
1 C fine chocolate wafer crumbs, + some to coat mice
silver balls (eyes), slivered almonds (ears), licorice string (tails)
Melt chocolate over hot water. Remove from heat. Blend in sour cream, stirring until mixed. Stir in 1 C wafer crumbs, mix well. Cover and chill until firm. Roll a Tbsp of mix in oval shape, slightly point the head. Coat with crumbs. Decorate. Refrigerate. Makes 16-18 mice.
Peanut Butter Balls
1 C peanut butter
1 C icing sugar
1 C chopped dates
1 C chopped walnuts
1 Tbsp melted butter
6 sq semi-sweet chocolate
½ " paraffin cube
Combine first 5 ingredients. Mix well. Shape into balls. Melt chocolate & paraffin. Dip balls into chocolate and place on wax paper.
