Watercress and Cucumber Sandwich
This is quick and easy sandwich that is guaranteed to please even the most discriminating diner.  It is adapted from a recipie that I picked up from a restaurant in London where I was a chef. 
You will need 1 pound of very fresh watercress and 3 very fresh cucumbers.  Make sure that the cucumbers are firm but not hard and the watercress has a dark green color.  Due to the simplicity of this recipie even the slightest imperfection in your produce will produce less than stellar results. 

Chop watercress and thinly slice the cucmbers.  Place the watercress on a freshly baked loaf of French bread. Place the sliced cucumbers on top of the watercress.  Spread mayonaise, mustard, and ketchup on the top half of the baguette.  Place the the two halves together and slice.  Cheers!!
