| Irish Potato Soup |
| Ingredients 2 tbsp. butter 1 small onion chopped 1 celery rib chopped 6 medium potatoes peeled and diced 2 cans (10 1/2 oz each) condensed chicken broth 2 c. water 1 tsp. worchestershire sauce 1/4 tsp. dried thyme 1/4 tsp. black pepper In a soup pot, melt butter over medium heat and saute onions and celery for 3 - 4 minutes until tender. Add remaining ingredients, mix well. Increase heat to medium-high, bring to boil. Reduse heat to low, and simmer for 35 minutes. |
