EASY MEXICAN
CASSEROLE
Ingredients                 (serves 6)

1 pound ground beef
2 c. salsa
1 (16 oz.) can chilli beans (drained)
3 c. crushed tortilla chips
2 c. sour cream
1 (2 oz.) can sliced black olives (drained)
1/2 c. chopped onion
1/2 c. fresh tomatoes (diced)
2 c. shredded chedar cheese

Preheat oven to 350 degrees. Spray 9X13 inch baking dish with cooking spray.
In large skillet, brown ground beef, drain. Stir in salsa, simmer over med/low heat till liquid is absorbed. Stir in beans and heat through.
Cover bottom of baking dish with crushed chips. Spread beef mixture over chips, spread sour cream over meat.
Layer olives, onion and tomatoes over sour cream. Sprinkle shredded cheddar cheese over all.
Bake 30 minutes until hot and bubbly.
