Nice Camping Recipe.

We absolutely love our "potjiekos".  A "potjie" is a cast iron pot and you get them in many different sizes and you can prepare the whole meal in one of them.  The "potjie" is a very versatile piece of equipment because you can use it to prepare stews, roasts and you can even bake a bread in them.

I'm just going to give you one of my favourite "potjiekos" recipes but if you are interested I can you some more...

Oxtail potjie. (Feeds about 8 people)

Ingredients:

2 X oxtails (chopped)
Cooking oil
3 X chopped onions
2 X onions (sliced)
Salt
1 X packet Oxtail Soup
250 ml beef stock
4 X Potatoes (thick slices)
4 X Carrots (sliced)
1 X Tin of Butterbeans
250 g Green Peas
250 g Mushrooms
6 X Baby Marrows (sliced)
Lumps of dough (dumplings)

Method:

Use a number 3 Pot (Large)

  1. In a warm pot, fry the two oxtails and the chopped onions with a little cooking oil till nice and brown and add the salt.
  2. Add the beef stock and soup powder and leave to slowly cook for about two and a half hours till the meat is nice and soft.  Skim of the fat.
  3. Add a layer of potatoes, carrots and the butterbeans with it's sauce
  4. Add a layer of Green peas, mushrooms, baby marrows and onion rings
  5. Close the pot and allow it to cook till the vegetables is about 15 minutes from done

Add the dough dumplings, close the pot and allow to cook for another 15 minutes, at this time you can add a few coals from the fire onto the lid of the pot. to allow the dumplings to be well cooked from the top as well.
