Coffee Crumbcake


Cake:

  • 13 x 9 x 2 inch pan greased
  • 1 1/2 C buttermilk
  • 2 1/2 C flour
  • 1 t cinnamon
  • 1 t soda
  • 1 t salt
  • 1/2 C butter
  • 2 C brown sugar
  • 1 egg

Topping:

  • 1/2 C flour
  • 1/2 C brown sugar
  • 1/4 C butter
Preheat oven to 350�. Sift flour, cinnamon, soda and salt in medium bowl. Cream butter and sugar in a large bowl. Add egg and mix until smooth. Add dry ingredients and buttermilk alternately to creamed mixture.
Pour batter into greased pan. Topping: Mix flour and sugar. Cut into butter til crumbly. Works best if butter is VERY cold. Sprinkle topping on batter. Bake 40 to 45 minutes.
