SALADS:

Texas Caviar.......Submitted by Kelly Baxter Dowd.

INGREDIENTS:

BRING THE FOLLOWING TO A BOIL:
1- Tsp. salt
1- Tsp. pepper
1- Tbls. water
3/4 - Cup cider vinegar
1/2- Cup cooking oil
1- Cup sugar
LET COOL COMPLETELY.

MIX WITH FOLLOWING:
1- Can pinto beans (be sure to drain and rinse beans)
1- Can garbonzo
1- Can black eyed peas
1- Can black beans (be sure to drain and rinse beans)
1- Can White corn
1- Cup peppers, chopped (1/2 green & 1/2 red)
1- Small onion, chopped

Let marinate at least 24 hrs. Will keep up to 3 weeks in refrigerator.
