The simple red chili is of great importance in Indonesia. Chili in Bahasa (language) Indonesian is “Lombok”. The best chili comes from Lombok Island only 30km east of Bali. Ampenan Port in west Lombok was an important port in the 1800’s, ships would arrive to take the treasured red chili back to Europe.
No Indonesian dish is complete without Sambal. To make sambal we need a traditional grinder called a “Ulek” it is made from volcanic black stone.
A traditional Ulek
A Ulek makes an excellent inexpensive gift for friends back home when you visit Indonesia. Before you first use you Ulek it must be prepared, to do this you: Soak your Ulek in water for 15 minutes, scrub with a coarse brush, rinse, rub white fresh coconut into the Ulek so the oil is absorbed, rinse again, now you are ready to make your first sambal.
6  red chili peppers
Salt
1 small Tomato
1 clove Garlic
¼  Oxo chicken cube or a sprinkling of MSG.
Cut stork off chili, then into small pieces. Cut garlic into small slices. Cut tomato into small pieces. First grind the chili in your Ulek, followed by the garlic and add salt and  Oxo/MSG. Finally grind in the tomato. Always served freshly, usually prepared last before a meal. All quantities of ingreadients may be varied to taste as you experiment. How hot can you go???
