Most of the following resturants are not frequented by tourists.
Be patient with their english as they are not as used to foreign languages as elsewhere ( They will probably be nicer too ! )
Many are located in neiborhoods where there is nothing else to see - you might need to walk a bit from the metro.

When the power goes, resturant becomes medievally lit.

Food from the "Sud-Ouest" region of France.
Duck, salade till it comes out of your ears.

ok so this one does appear in some guide books... but most of the time you cannot get in !!
Excellent Michelin star quality food: Lots of choice
Menu around 250F.
They have 3 seatings per night, if you reserve the week ahead you might get lucky
and get seated at 11PM, otherwise book several weeks ahead.
