Use any kind of good bread, Boston Brown Bread, Round and Finger Rolls, Baking Powder Biscuits, etc. Cut into any shape desired. If bread is stale, toast- otherwise, use fresh bread. Spread with soft butter or mayonnaise, and dip edges in chopped parsley or chopped beets. Chop the yolks and whites separately of hard-boiled eggs, and dip edges of sandwiches in this, if desired. This makes sandwiches look very attractive.


For Rolled Sandwiches, use the lightest kind of bread. Remove crust, and cut in very thin slices lengthwise. Spread with soft butter mixed with any colorful fillings--such as chopped pimento, green pepper, pistachio nuts, ground tongue, etc. Make one or more fillings. Roll bread-tighten wax paper around, and keep in refrigerator until needed. Slice in thin slices crosswise, and serve.


To make a Sandwich Surprise, cut off all crusts from a loaf of white bread (not too fresh). Slice five even pieces lengthwise. Spread one slice with butter and ground ham, one with pimento cheese, one with crushed pistachio nuts mixed with mayonnaise, and one with chopped eggs mixed with cream or mayonnaise. Stack, and cover entirely with cream cheese mixed with mayonnaise. Serve on a large platter garnished with olives, stuffed celery, radishes, green peppers, mixed pickles, etc. Cut at table when serving.


Slice white chicken or turkey. Season, and top with smaller slice of cranberry jelly; or, cut a round slice of cranberry jelly and place on a larger piece of white bread with chicken or turkey on top.


Place a thin slice of smoked salmon on buttered bread. Place a slice of hard-boiled egg on top of the salmon, and 2 thin strips of green pepper on the egg.


Peal and stone I alligator pear. Mash. Season with salt, pep- per, sugar, lemon juice, and a few grains of cayenne or Tabasco. Spread on potato chips, crackers, or bread.


Place a slice of tomato on bread and sprinkle with salt and pepper. Top with a slice of white chicken, and garnish with cooked string beans cut lengthwise or with strips of green pepper. (Any left-over roast may be used in place of chicken.)
