Fresh or canned mushrooms ~ sliced
1 cup white vinegar
1 tbsp. oregano
1/2 cup olive oil
3 cloves garlic ~ minced
1 tsp. crushed red pepper
Place vinegar in a saucepan and heat. Add sliced mushrooms, (drained, if canned), stirring well. Keep stirring and cook over low heart for 4~5 minutes. Drain off vinegar and let mushrooms cool. When thoroughly cooled, put mushrooms in a bowl. Add all other ingredients, sprinkling olive oil over all. Mix well. Cover and refrigerate allowing mushrooms to marinate at least over-night.
