Sauces



AISLING�S
APRICOT SALSA

4 fresh, ripe apricots, chopped
� of a red or Sweet Vidalia onion, chopped
� of a red pepper, chopped
� of a green pepper, chopped (I used two peppers for color, you could just use one whole one instead)
� of a peeled, seeded cucumber, chopped
1 jalape�o, chopped
2 Tbsp chopped fresh basil (or cilantro)
1 Tbsp honey
Juice of � a lime

Mix together. Adjust amounts of lime or honey to taste. Serve with grilled fish or chicken.

BENIDA�S
HOME-MADE MAYONNAISE

You will need:
-One egg yolk
-strong mustard
-vegetable oil
-lemon juice and/or vinegar
-salt, pepper
-garlic (optional)

What to do:
-In a medium sized bowl, beat egg yolk and mustard.
-stir in vegetable oil a little bit at a time, while beating. If you put in too much at a time in the beginning, it won't work. Towards the end, you can add more oil in at a time. do this until you have the desired quantity of mayo.
-add lemon juice and/or vinegar, as well as salt, pepper, and garlic to taste. Beat.
-use this mayo to make tuna salad, put in sandwiches, etc. It's sooo good with left-over turkey sandwiches after thanksgiving.

MAPLE SYRUP FONDUE

Simply delicious. Use real maple syrup from Quebec. It�s the best! (No, I am not biased in any way.)

� cup Canadian maple syrup
� cup heavy whipping cream (35%)
1 tablespoon cornstarch, diluted

Over medium heat, heat syrup and cream until thickened. Stir in cornstarch. Serve with fresh fruit, chocolate and maple sugar pieces.

BB�S
RAITA

This is a great healthy summer dip - so easy to make and v. yummy

125 ml yogurt
� cucumber, deseeded & roughly grated
1 small garlic clove, crushed (I usually add a little more garlic)
1 tablespoon chopped fresh mint
Salt & pepper, to taste

Combine all ingredients together, cover & chill for 2 hours before serving. Great with veggies, warm pita bread, just about anything.

KIM�S
SEMI-SIMPLE MARINADE

This marinade is from a cookbook.

1/3 cup black or mixed peppercorns
1 tsp coriander seeds
1 tbsp coffee beans
1 tsp salt
1� cups red wine
� cup steak sauce
� cup soy sauce
2 cloves crushed garlic
2 tsp paprika

Ground pepper, coriander, & coffee beans. Add salt. Press spice mixture onto both sides of steaks. Put into large Ziploc bag or glass baking dish. Combine wine, steak sauce, soy sauce, garlic, and paprika & pour over steak. Seal bags or cover dish and stick in fridge for a few hours, turning steak once while it marinates. Remove meat from marinade & pat dry with paper towels. Grill steak brushing with marinade while cooking. Boil leftover marinade to reduce, adding more wine, if desired & serve with/over steak.

It may sound like a pain in the ass but you can buy these things in bulk food sections of your grocery store so you won't be wasting anything.

ATHENA�S
SOFRITO

1 large green bell pepper
1 large yellow bell pepper
1 large red bell pepper
1 large orange bell pepper
4 celery stalks
4 green onions, stems removed
32 oz bottle of green olives with pimiento
Paprika for color

Cut up all vegetables, place in blender and puree. This Puerto Rican seasoning is great for chili, soups, and whatever else you desire.

REFINNEJ�S
STIR-FRY SAUCE

2 tsp cornstarch
2/3 cup water
2 Tbsp soy sauce
2 tsp brown sugar
1 tsp garlic powder
� tsp ground ginger
1/8 tsp black pepper

Blend all ingredients together, and allow to sit while preparing vegetables.

Once vegetables are stir-fried, add sauce, and heat until thickened.
