This is the first cookbook, part two. I'll get it all formatted later.

TRYINGTOBEHIP�S
TACO SALAD

This sounds extremely gross, but it is so good!

You�ll need:
1 head lettuce, chopped
1 tomato, chopped
1 can of kidney beans, drained and rinsed
1 c. shredded cheese (I used the kind for nachos and tacos for extra seasoning)
1 lb. hamburger seasoned with � package of taco seasoning
� c. sliced black olives
1 bag of Nacho Cheese Doritos
Dressing:
� c. sour cream
1 tbsp. milk
1 bottle of Thousand Island dressing
� c. sugar
Remaining taco seasoning

Stir together all the ingredients for the dressing and set aside. Mix together all the salad ingredients except the Doritos in a very large bowl and then add the dressing. Stir until entire salad is coated with dressing. Crush the Doritos while still in the bag to avoid a huge mess. Add those to the salad right before serving so they don�t get too mushy.

Note: If you are planning on making this for yourself and will eat the leftovers, I recommend adding the crushed Doritos as you eat each bowl instead of mixing it all in at first to savor the crunchiness factor of the salad.




CATKLEIN�S
THREE PEPPER PASTA SALAD

You�ll need:
1 package (12-oz) tri-color pasta
2/3 c. Olive oil or vegetable oil
3 tbsp. cider or red wine vinegar
� c. minced fresh basil or 1 tbsp. dried basil
2 tbsp. grated Parmesan cheese
1 � tsp. salt
� tsp. pepper
1 sweet red, yellow, and green pepper, julienned
1 medium tomato, cut into thin wedges
1 can sliced olives, drained
2 tbsp. sliced green onions
8 oz. mozzarella cheese, cubed

Cook pasta according to pkg. directions. Meanwhile, in a blender or food processor, combine oil, vinegar, basil, Parmesan, salt, and pepper. Cover and process till smooth. Rinse pasta in cold water; drain and place in large bowl. Add peppers, tomato, olive, and onions. Add dressing; toss to coat. Add mozzarella and toss. Serve at room temperature and chow down!

YUMMY FATTENING PASTA SALAD

You�ll need:
1 box of small or medium shell pasta
1 medium green pepper
� medium red pepper
� medium yellow pepper
1 medium to large tomato
� small onion
� - � lb. of hard salami
� - � lb. of pepperoni
� lb. of Monterey jack cheese
� lb. of mild cheddar cheese
� c. olive oil
� c. red wine vinegar

Cook the pasta and run cool water over it until it is chilled. Cut up vegetables into bite size pieces. Also cut cheese and meats into bite-size pieces. Toss all together with pasta. Add the oil and vinegar and mix it all up. Chill and serve. Serves 8-10.

CHIPOTLE MAYONNAISE

You�ll need:
� c. mayo
1 large clove garlic, minced
lime juice to taste
1 tsp. Chipotle powder
dash of sea salt and freshly ground pepper

Whisk ingredients until combined.




SUGARCOOKIE�S
CREAMY YOGURT DRESSING

You�ll need:
1 c. nonfat plain yogurt
2 tbsp. lime juice
� tsp. cumin, ground
� tsp. cinnamon, ground
just a weensy bit of celery salt
2 tbsp. finely chopped red onion
1 tsp. dill weed
2 tbsp. minced fresh cilantro
1 � tsp. fresh lemongrass

Blend all ingredients except the dill into a creamy dressing. Stir in dill weed. Really good on shredded cabbage, or with cucumber when you�re eating Indian food.




SUGARCOOKIE�S
GREEK TO ME DRESSING

You�ll need:
� c. extra virgin olive oil
� c. red wine vinegar
� c. feta cheese
1/8 cup sun-dried tomatoes
1 tbsp. fresh basil, sliced into thin strips
2 tbsp. diced red onion
1 clove garlic, crushed
Couple twists of black pepper
Blend all ingredients except basil. Just stir that in.




SUGARCOOKIE�S
DIRTY MARTINI DRESSING

You�ll need:
� c. extra virgin olive oil
1/8 c. white wine vinegar
1 tbsp. vermouth
1 tbsp. gin (get the good stuff)
� c. green olives (I used almond stuffed...good idea!)
1 tbsp. olive brine
1 clove garlic, crushed
pinch salt
� tsp. mustard powder
1 tsp. honey

Blend all ingredients except olives until smooth. Add olives and pulse once just to tear them up.




SUGARCOOKIE�S
ROASTED GARLIC CHEESE DRESSING

You�ll need:
1 head of roasted garlic (pulp squeezed out)
� c. vinegar
1 tsp. olive oil
� c. fat free ricotta cheese
3 tbsp. reduced fat Parmesan cheese
1 tsp. dried basil
1 tsp. dried oregano

Blend all ingredients. Stir in a little more Parmesan, for chunkiness. Kind of strong and vinegary, but I like �em like that.




SUGARCOOKIE�S
STINKY PEAR DRESSING

You�ll need:
1 comice, or other dessert pear, cubed and peeled
� cup Gorgonzola cheese, crumbled (if Gorgonzola can�t be found, use L�Auvergne . . . I did)
1 tbsp. fresh minced thyme
1 tbsp. fresh rosemary
1 tbsp. dried shallots
� c. balsamic vinegar (I was lucky enough to find some that was pear-infused . . . heaven)
� c. walnut oil
2 tbsp. fresh lemon juice
dash white pepper
� c. chopped, toasted walnuts

Blend all ingredients except walnuts and pears until smooth. Add pears, pulse one-two times. Add walnuts, and pulse once. The nuts should be crumbly, not dust!

Makes 1 � cups.

TARTAR SAUCE

Actually, I stole this from Emeril.

You�ll need:
1 c. mayonnaise
2 tbsp. finely chopped scallion
2 tbsp. lemon juice
1 tbsp. minced parsley
1 tbsp. Creole or grainy mustard
1 tsp. minced garlic
� tsp. salt
� tsp. cayenne pepper

In bowl, mix all ingredients.




SUGARCOOKIE�S
THAI PEANUT DRESSING

This has so little fat, I don�t even think about it. Low-fat peanut butter (I used �Peanut Wonder,� which has 2.5 g. of fat in a 2 tablespoon serving) is used, and only 1 and a half teaspoons of it. Plus, this makes a lot of dressing.

You�ll need:
1 � tsp. lowfat peanut butter
6 tbsp. lime juice
2 tbsp. low-sodium soy sauce
2 tbsp. water
1 tsp. sugar
1/4 tsp. Tabasco sauce
3 tbsp. chopped fresh cilantro
2 tbsp. chopped fresh basil
1 tbsp. chopped lemongrass
2 tsp. chopped fresh mint
3 cloves of garlic, crushed

Blend all ingredients.




FREDIEKAT�S
HOMEMADE VANILLA EXTRACT

2 c. vodka
5 vanilla beans, cut into 1 inch pieces

Combine vodka and vanilla beans in a jar with a tight fitting lid. Cover the jar and let it sit for 6-8 weeks. Shake jar once a day. The mixture will turn an amber color after a few days.

After half the extract is used, add enough vodka to cover the beans. When the vodka no longer turns dark the flavor of the beans is gone.

Yields 2 cups.

Another Version:

1 c. brandy
2 vanilla beans cut in 1-inch pieces

Combine brandy and vanilla beans in a jar with a tight-fitting lid. Cover and let stand 3 months, shaking 3 times a week. Use the beans for several batches. When it no longer turns dark, add more beans.

Yields 1 cup.

EASY CHEESE GARLIC BISCUITS

You�ll need:
2 c. Original Bisquick
2/3 c. milk
� c. shredded cheddar cheese (2 oz.)
� c. margarine or butter, melted
� tsp. garlic powder

Heat oven to 450�. Stir Bisquick, milk, and cheese until soft dough forms; beat vigorously 30 strokes. Drop dough by 10 to 12 spoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown. Mix margarine and garlic powder; brush on warm biscuits before removing from cookie sheet. Serve warm.

Makes 10 to 12 biscuits.




KAYLYNN'S
GRAND-MAMAN'S BANANA BREAD

You�ll need:
1 cup white sugar
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup shortening
1 egg
3 ripe (over-ripe) bananas

Mix dry ingredients; add shortening and blend well.
Add the egg (scrambled) and bananas (mashed).

Bake 1 hour at 325. Check at 45 minutes.
Baking temp/time may vary, depending on if you have a grandmother-old oven, or a brand-new convection oven.

GRANNY�S DINNER BUNS

You�ll need:
2 c. quite hot water
3 tbsp. oil
3 tbsp. sugar
1 tsp. salt
1 egg
5 c. flour
1 pkg. instant action yeast

Mix first 4 ingredients, add egg and beat well. Add 2 � c. of flour. Beat well and add instant action yeast. Add another 2 � c. flour, mixing with the hand when it�s too stiff for a spoon. Dump on floured surface and knead 8-10 minutes. Put in a warm place (oven is good) and let rise for 20-30 minutes. Punch down and let rise another 20-30 minutes.

Punch down and form into buns, let rise 1 hour. Form into buns, and bake @ 375�.




BODKINVANHORN�S
IRISH SODA BREAD

You�ll need:
2 c. flour - sifted
� tsp. baking soda
� tsp. salt
1 tbsp. sugar
6 tbsp. butter
� c. raisins (dark or light, either is good)
1 tbsp. caraway seeds
� c. white vinegar
� c. milk

Preheat oven to 375�. Combine milk and vinegar, set aside. (It is going to curdle. That�s the point. Don�t freak). Sift dry ingredients together. Cut in the butter. Stir in raisins and caraway seeds. Add milk/vinegar mixture and blend with a fork. Turn in to a greased cake pan. Shape into a circle and pat down. Cook for 30 minutes, until slightly golden.




SPAZ�S
MOTHER�S CORNBREAD

Here is my fave Southern cornbread recipe (not sweet like that Yankee stuff!). It�s fantastic with chili.

You�ll need:
1 c. cornmeal
1 c. flour
3 tsp. baking powder
� tsp. baking soda
1 tsp. salt
2 eggs
1 � c. buttermilk
� c. shortening (Crisco or Wesson Oil are fine)

Sift the dry ingredients together and set aside. Beat eggs and stir in the buttermilk.
Add the dry ingredients to the eggs and buttermilk. The batter will be rather thin. In an iron skillet or a square cake pan, heat the shortening. This greases the pan. Pour the shortening into the batter, mix well, and pour into the pan to bake. (If you are using oil, swirl some around the pan to grease it before adding to the batter. It is not necessary to heat it.) Bake in a preheated 450 degree oven for 20 to 25 minutes.




CALAFIA�S
PA�S WHOLE WHEAT BREAD

My grandfather used to make this for us as children (we preferred it to birthday cake) - it is a family recipe.

In a large bowl:
� c. water @ 110�
1 tbsp. brown sugar
2 pkgs. yeast
Set this mixture aside to ferment.

In a saucepan - Mix and heat to 125�
3 c. buttermilk
1/3 c. packed brown sugar
� tsp. baking soda
1 tbsp. salt
3 tbsp. oil.

Add contents of saucepan to mixture in bowl, then add:
� c. cracked wheat
� c. wheat bran
� c. wheat germ
1 � c. white flour

Mix well. Add 5 � c. whole wheat flour as you knead.

Cover and allow to rise. Punch down. Shape and place in pans to rise again. Bake at 350� for 40 minutes.

SPICY CORNBREAD WITH GREEN CHILIES

You�ll need:
1 c. cornmeal
1 c. flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. salt
� t. freshly ground black pepper
1 egg, beaten
1 c. milk
� c. vegetable oil
� c. corn kernels
� c. canned mild or hot green chilies
� tsp. cayenne pepper
butter for greasing pan

Preheat the oven to 425�. In a large mixing bowl, mix together the cornmeal, flour, sugar, baking powder, salt, and pepper. Make a well in the center of the mixture and add the egg, milk, oil, corn, chilies, and cayenne pepper.

Pour the batter into a 9-inch greased baking pan and bake 20 minutes or until the cornbread separates ever so slightly from the sides of the pan. Place the pan on a wire rack to cool slightly, then cut into 16 squares and serve warm with plenty of butter.




BODKINVANHORN�S
ALMOND MACAROONS

You�ll need:
2 c. blanched almonds
1 c. sugar
3 large egg whites, unbeaten
� tbsp. fresh lemon juice
dash of salt

Preheat oven to 350�. Grind nuts in a food processor. (Careful you don�t let it turn into paste!) Stir in all else. Line a cookie sheet with parchment paper. Roll heaping teaspoons into a ball and flatten. Leave 4" in between.

Cook on the middle rack, 18-20 minutes, until cookies spread and brown slightly.

Option: I like to melt chocolate chips and dip half the cookie. Yum.




OLIVEJUICE�S
APPLE-BERRY PIE

You�ll need:
3-5 baking apples
1 pkg. raspberries and/or blackberries (fresh)
2 c. sugar and 1 tbsp. sugar (separate)
1 c. flour
� c. milk
2 premade piecrusts, or enough homemade crust for top and bottom.

Peel and cut apples into thin slices. Mix apples, berries, flour and 1 c. of sugar in bowl. Fill piecrust with mixture, except save a few of the apple slices and berries on the side. Cover pie with other crust and decorate with extra apples and berries from mixture. Mix milk and sugar and baste mixture over top crust and apples and berries. Bake at 350� for about 30-40 minutes.

WARNING: The berries can make this pie super-juicy, so you may want to add more flour to thicken it. I like it juicy.




MAYABOO�S
BAKED APPLES

You�ll need:
Granny Smith apples (1 per person)
Butter
Cinnamon
Raisins
Brown sugar
Walnuts

Preheat oven to 350�F (180�C). Grease baking dish with butter. Core apple(s) and place in dish. Combine sugar, raisins, walnuts and cinnamon in small bowl. Fill centers of apples with this mixture, and place a small knob of butter on top of each apple. Bake 45 minutes, basting occasionally. Also great served with ice cream.




BUNNYROCK�S
CHOCOLATE CHEESECAKE CUPCAKES

Preheat your oven to 350�F.

First off, you�ll need a chocolate-cake base. You can make it from scratch, but let�s face it; no one really has time for that. I get the kind of cake mix that is extra moist and has pudding in the mix, �cause, damn, pudding.

For the filling, you�ll need:
1 pkg. regular cream cheese, softened
1 egg
1/3 c. sugar
pinch of salt
1 c. of chocolate chips

Beat together the cream cheese, egg, sugar, and salt. Once that�s all mixed together and creamy smooth, stir in the chocolate chips.

Fill your cupcake cup half full with the chocolate-cake mixture. Take a tablespoon of the cream-cheese filling and plop it down into the center of the mixture. Bake on the middle rack of your oven until the cream-cheese bits start to become golden and the cake part is baked all the way through. (Stick a toothpick into the cupcake. When it comes out clean, they are done.)

BUTTER PECAN CREAM CHEESE BARS

You�ll need:
Base:
2 c. flour
2/3 c. firmly packed brown sugar
� c. butter, softened
1 c. chopped pecans
Filling:
8 oz. pkg. cream cheese, softened
1/3 c. firmly packed brown sugar
� t. vanilla
2 tbsp. flour
2 eggs
6 oz. butterscotch chips
Glaze:
1 oz. unsweetened chocolate, melted

Heat oven to 350�. Lightly spoon flour into measuring cup and level off. In large bowl, blend 2 c. flour, brown sugar, and butter until crumbly. Stir in pecans. Press crumb mixture into a 13" by 9" pan. Bake at 350� for 15 to 20 minutes or until light golden brown.

In a small bowl, beat cream cheese, brown sugar and vanilla. Blend in 2 tbsp. flour and eggs. Pour filling over baked crust. Sprinkle butterscotch chips on top of filling. Bake at 350� for 15 to 20 minutes or until firm to touch. Drizzle with melted chocolate.

Yields 32 bars.




DIANDRA�S
CHEWY CUPCAKE BROWNIES

You�ll need:
� c. all-purpose flour
� c. brown sugar, firmly packed
3 tbsp. unsweetened cocoa
� t. baking soda
� t. table salt
� c. water
� c. canned unsweetened applesauce
� t. vinegar, cider
1 � tsp. margarine, melted
� t. vanilla extract

Preheat oven to 350�F.

In a bowl, stir together flour, brown sugar, cocoa, baking soda, and salt. In a second bowl, stir together remaining ingredients. Pour water mixture over flour mixture and stir until batter is smooth.

Pour into a non-stick 12-hole muffin tin coated with cooking spray, filling until half full. Bake until toothpick inserted in center of cupcake comes out clean, 18-20 minutes.

Remove from oven. Let sit 5 minutes, then turn out onto rack to completely cool.




SKATES�
CHOCOLATE CHIP SCONES

You�ll need:
2 c. unbleached all-purpose flour
1/3 c. plus 2 tbsp. sugar
1 tsp. baking powder
� tsp. baking soda
� tsp. salt
6 tbsp. (� stick) chilled unsalted butter, diced
1 tsp. (packed) grated lemon peel
� c. miniature semisweet chocolate chips
� c. chilled buttermilk
1 large egg yolk
1 teaspoon vanilla extract
Milk (for glaze)

Butter and flour baking sheet. Sift 2 c. flour, 1/3 c. sugar, baking powder, baking soda and salt into large bowl. Add butter and lemon peel; rub in with fingertips until butter is reduced to size of rice grains. Mix in chocolate chips. Whisk buttermilk, egg yolk, and vanilla in small bowl to blend. Add buttermilk mixture to dry ingredients; mix until dough comes together in moist clumps. Gather dough into ball. Press dough out on lightly floured surface to 8-inch round; cut round into 6 wedges. Transfer wedges to prepared baking sheet, spacing 1 inch apart. (Can be prepared 1 day ahead. Cover and refrigerate.)

Preheat oven to 400�F. Brush scones lightly with milk; sprinkle with remaining 2 tablespoons sugar. Bake until scones are crusty on top and tester inserted into center comes out clean, about 20 minutes. Serve warm.

Makes 6 scones.




OZYMANDIAS�
CREAM SHERRY CAKE

You�ll need:
1 pkg. yellow cake mix
1 (3.4 oz.) pkg. vanilla instant pudding mix
4 large eggs
� c. vegetable oil
� c. cream sherry
Powdered sugar
Berries and Wine (see below for recipe)

Beat cake mix and next 4 ingredients at medium speed with an electric mixer for 2 minutes. Pour batter into a greased and floured 10-inch tube pan.

Bake at 350� for 45-50 minutes or until toothpick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and cool on a wire rack. Sprinkle with powdered sugar, and serve with Berries and Wine.


Berries and Wine

You�ll need:
2 c. dry red wine (Zinfandel is recommended)
1 teaspoon fresh lemon juice
� c. sugar
2 c. fresh strawberries
1 c. fresh raspberries
1 c. fresh blueberries
1 c. fresh blackberries

Stir together first 3 ingredients. Add remaining ingredients; let stand at room temperature for 1 hour. Chill 30 minutes before serving.

FAMOUS TURTLE BARS

You�ll need:
Base:
2 c. flour
� c. powdered sugar
� c. butter, softened
2 tbsp. whipping cream
1 tsp. vanilla
Filling:
28 vanilla caramels
� c. whipping cream
� c. butter
1 c. powdered sugar
1 c. chopped pecans
Glaze:
� c. chocolate chips
2 tbsp. whipping cream
1 tbsp. butter
� c. sifted powdered sugar
1 tsp. vanilla

Heat oven to 325�F. Lightly spoon flour into measuring cup; level off. In large bowl, blend all base ingredients until crumbly. Press mixture into ungreased 15" by 10" jelly-roll pan. Bake for 15 to 20 minutes until lightly browned.

In a small saucepan, melt caramels with � of the cream and � c. butter, stirring constantly until smooth. Remove from heat; stir in 1 c. powdered sugar and pecans. Spread over base. Add additional cream if needed for spreading consistency.

In a small saucepan over low heat, melt chocolate chips with 2 tbsp. cream and 1 tbsp. butter, stirring constantly until smooth. Remove from heat; stir in � c. sifted powdered sugar and vanilla. Drizzle glaze over bars.

Makes 48 bars.

FUDGY BROWNIES

You�ll need:
1 bag of chocolate chips (bittersweet or dark chocolate preferred)
1 stick of butter
1 teaspoon vanilla
� c. flour
1/8 tsp. baking soda
3 eggs
1 c. sugar

Empty the chocolate chips into a heavy saucepan. Add the butter. Melt the two over medium heat, stirring the whole time. Once they are melted, move them off the heat and stir in the vanilla. Let this cool to room temperature.

Mix the flour and baking soda together in a small bowl.

In a separate bowl, add sugar and the three eggs. Whisk this until it�s light and frothy. This will take a couple of minutes.

When the chocolate mixture has cooled, fold first the flour/baking soda mixture into the eggs and sugar and then fold the chocolate mixture into that. Pour into an 8" x 8" pan and bake at 325� for about 45 minutes. The brownies are done when the edges are a bit crusty and the middle has set but is not over cooked. When you put your hand on the middle of the brownies, they will feel cooked but not overly firm. Let cool for two hours before cutting.




JULIENE�S
GERMAN CHOCOLATE PIE

You�ll need:
6 thawed Rhodes frozen dough Texas rolls or 12 thawed Rhodes frozen dough dinner rolls
1 c. chocolate chips
1 c. chopped pecans
1 c. shredded coconut
3/4 can sweetened condensed milk

Preheat over to 400�. Roll out the dough and place on a round baking pan-I prefer the cheapie aluminum pizza pans. Poke with a fork and bake for five minutes. Spread chips onto crust. Put in oven long enough to melt chips (about 1 minute), then spread around with spatula. Top with pecans, coconut, and milk. Bake at 350� for 5 minutes.

HELLO DOLLY SQUARES

You�ll need:
1 stick butter
1-2 c. crushed graham crackers
1 can sweetened, condensed milk
1 c. chopped walnuts
1 c. chocolate chips
1 c. shredded coconut

Melt butter in 9" x 9" or 9" x 13" pan (size unimportant, though the bigger the better: more cookies!). Sprinkle grahams on top. (The layer should be thick enough that not all the crumbs are absorbed by butter.) Pour condensed milk evenly over grahams. Top with walnuts, chocolate chips, and coconut (coconut must be on top.) Press down so that the condensed milk seeps up a little bit and touches everything. Bake @ 350� on middle or top shelf of oven for 15-20 minutes. Check frequently and remove when coconut starts to brown. (If using a glass pan, check bottom so it doesn�t burn.) Slice when hot, but let cool before removing from pan.

(Butterscotch chips can be substituted for chocolate ones.)




SUGARCOOKIE�S
ITALIAN GELATI

You�ll need:
1 serving of favorite fruit, frozen. (I used a mix of peaches and
strawberries; about 1 c.) � tsp. low-sugar grape jelly (about 7 calories)
1 tbsp. nonfat-vanilla yogurt cheese or fat-free ricotta cheese (I recommend either, just as good)
2 tbsp. fresh lemon juice, or more as needed
1 tsp. Splenda sweetener

In a food processor, combine fruit, lemon juice, Splenda, and jelly. Pulse until smooth, scraping the sides of the bowl. Add more lemon juice as needed, but taste as you go. Drop in the cheese and pulse until creamy.




SCORP�S
KRISPIE PEANUT BUTTER BARS

You�ll need:
1 c. sugar
1 c. corn syrup
1 c. peanut butter
4 or 4 � c. Rice Krispies

Cook sugar and corn syrup in a 3-quart saucepan over moderate heat until mixture boils. Remove from heat. Stir in peanut butter. Mix in Rice Krispies. Press into a buttered 8" x 8" pan. Let harden.

When they are cool, slice �em into squares.




CHANCE�S
PMS FUDGE

Super easy and fast

You�ll need:
� c. of cocoa
� c. of butter
2 c. of sugar (1 brown and 1 white)
� c. of milk

Melt together in large saucepan, keep stirring. Bring to boil and boil for 10 minutes; this should be done on low heat. Remove from heat

Add:
1 tsp. vanilla
1 c. of flour

Stir until your arm falls off and fudge thickens.

Pour into pan, plate or your mouth

Let cool in fridge until firm.

PRALINES

You�ll need:
3 c. sugar
1 � c. evaporated milk
3 c. pecans
� stick butter
� tsp. vanilla extract

In a large pot, mix sugar and milk. Heat on high to boiling, stirring continuously. At boil, add pecans. Lower heat and add butter. Cook until thick. When you draw the spoon across the bottom and you can see the bottom, mixture is ready. Spoon out on wax paper. Let cool.

Makes about 2 � dozen pralines.




JEMIMA�S
SKOR BARS

Line a 9" x 13" pan with graham wafers. Sprinkle sliced almonds over to cover well. Bring to a boil � c. brown sugar and 1 c. butter. Boil for three minutes and pour over base. Bake at 350� for eight minutes. Pour chocolate chips over and let sit to melt. When melted, score chocolate with a fork.

Hmm, just realized that that recipe doesn�t have amounts for most of the ingredients-I just kind of guesstimate.




OZYMANDIAS�
STRAWBERRY PRETZEL SALAD

You�ll need:
First layer:
2 c. broken thin pretzel sticks
� c. melted margarine
3 tbsp. sugar

Second layer:
1 (8 oz.) pkg. cream cheese
1 c. sugar
1 medium container Cool Whip

Third layer:
2 (3 oz.) boxes strawberry JELLO
2 c. boiling water
2 (10 oz.) pkg. frozen strawberries, partially thawed

First layer: Combine pretzel sticks, margarine and sugar. Place on bottom of 9" x 13" pan. Bake at 400� for 8 minutes, cool.

Second layer: Combine ingredients, spread over cooled pretzels.

Third layer: Mix JELLO and water and add strawberries. Let cool 5-10 minutes. Pour over top of cream cheese mixture.

Refrigerate until firm, about 3 hours.




TRYINGTOBEHIP�S
SUGAR COOKIE PIZZA

You�ll need:
1 pkg. of ready-made sugar cookie dough
1 � c. Cool Whip
1 container of vanilla yogurt
3 c. of assorted fresh fruit

With floured fingers, press cookie dough evenly into a greased 14-inch pan. Bake at 350� for 12-15 minutes. Allow to cool. In a small bowl, combine the Cool Whip and yogurt. Spread over the cooled crust and top with the fresh fruit.

TIRAMISU

You�ll need:
24 ladyfingers
5 large egg yolks
1/3 c. sugar
1/3 c. sweet Marsala
1 tbsp. water
� c. heavy cream
2 tsp. vanilla
12 to 14 oz. mascarpone cheese, softened
1 c. cooled espresso
3 tbsp. rum or brandy
3 tbsp. sugar
5 oz. semi sweet or bittersweet chocolate, grated
1 tbsp. unsweetened cocoa

In a medium heatproof bowl, beat on high speed until thick and pale yellow the egg yolks and 1/3 c. sugar. Whisk in the Marsala and tbsp. water. Set the bowl in a large skillet of barely simmering water and whisk or beat on low speed until the mixture reaches 160� F (use a candy thermometer). Remove from skillet and let cool for about 15 minutes.

Beat the heavy cream with the vanilla until soft peaks form.

Place the mascarpone cheese in a bowl. Fold in the whipped cream mixture and the cooled egg yolk mixture.

In a shallow dish, combine the espresso, liquor, and 3 tbsp. sugar. Dip half of the ladyfingers into the espresso mixture and arrange in a serving dish, leaving a little space between each. Spread half of the mascarpone filling over and between the ladyfingers. Sprinkle with half of the grated chocolate.

Dip the remaining ladyfingers into the remaining espresso mixture and arrange on top. Spread the remaining filling over and between the ladyfingers and sprinkle with the remaining grated chocolate. Sift the cocoa over the top.

Cover and refrigerate for at least an hour or up to 24 hours before serving.

TROPICAL FRUIT PIE

You�ll need:
Filling:
1 � pints fresh strawberries
2 Bananas
3 Kiwis
� pineapple
Crust:
1 c. raisins
3 c. dehydrated bananas
� c. dehydrated bananas

Directions for crust:
Combine all ingredients in a food processor with the �S� blade. Let run for about a minute. Then line the pan.

Directions for filling:
Cut one banana, 3 kiwis, � pint strawberries, and � pineapple into small slices and line the bottom of a pie shell with the fruit slices laid flat. Next, combine 1 pint of strawberries and 1 banana in a food processor using the �S� blade. Process until pureed. Refrigerate for 30 minutes.




SUGARCOOKIE�S
A GOOD KILL

This has led me to fall down laughing in busy streets, get turned away at bars, and get kicked off buses. Looks like hell, tastes like heaven-and goes well with loud industrial music like Pigface and KMFDM.

You�ll need:
1 1/2 oz. Jaegermeister
1 1/2 oz. top shelf vodka (I use Skyy or Absolut. Stoli is just too good for this drink. Heh)
Top with orange juice
ice

Shake well, serve on the rocks. I use a double old-fashioned glass. It looks like puke, but it works. Trust me.

APPLE PIE SHOTS

Mix apple juice and vodka in shot glass. Top with whipped topping, cinnamon, and sugar

CHAMPAGNE COSMOPOLITANS

For when you're feeling fancy-schmancy, or found an extra $50 on the street.

You�ll need:
1 � c. Cointreau or Grand Marnier
1 � c. cranberry juice cocktail
� c. plus 2 tbsp. fresh lime juice
3 tbsp. superfine granulated sugar (regular sugar won�t dissolve, so you really should go for the superfine-find it in any supermarket)
4 c. chilled Champagne or other sparkling wine

Stir together Cointreau, juices, and sugar and chill, covered, 2 to 6 hours.
Just before serving, divide among 10 champagne flutes and top off with champagne.
Garnish with lime slices or a strawberry, if you like.

COSMOPOLITAN

You�ll need:
1 � oz. Vodka
� oz. Cointreau
� oz. Lime Juice
1 splash Cranberry Juice

Mix and shake over ice until very cold. Strain into chilled cocktail glass. Garnish with lemon twist, if desired.

Very smooth and delicious . . .

Fill a glass 2/3 full with champagne. Add a shot of vodka and some pineapple juice until it is full.

FAVOURITE FRESH GINGER SODA

I cut up fresh ginger, put it in the glass, put in 2/3 soda water, 1/3 7-UP or Sprite and a splash of cola. Add lots of ice and a wedge of lime and it�s super yummy and super refreshing.




SPAZ�S
HALF-AND-HALF ICED TEA

Buy a large can of frozen lemonade concentrate (like Minute Maid).
Brew some tea (follow directions on box).
Let tea bags steep in water for 3 to 5 minutes.
Dilute the thawed lemonade with the tea (instead of water) and there you have it!
Keep in the refrigerator.
*Do not let it steep too long or it gets a little bitter.




MAYABOO�S
HOMEMADE FRAPPUCINOS

You�ll need:

�Coffee master mix�:
1 c. strong-brewed coffee (ideally espresso)
1 c. dark corn syrup
� c. very fresh low-fat milk
� c. dry skim milk
� tsp. Vanilla extract

Combine in a jar or pitcher, shake before use-store in fridge. Makes 2� cups

For Frappucinos:
Mix � c. Coffee master mix with 1 cup ice, and some ground cinnamon. Blend until smooth. If desired, add some Bailey�s or Kahlua.

MARGARITAS ON THE ROCKS

You�ll need:
1 can frozen limeade concentrate
Tequila to taste
Triple sec (the alcoholic kind) to taste
About � of a Heineken
Limes and coarse salt for garnish

Mix together in a pitcher and add ice. Tastes kind of like sweet tarts. Mmm.

Use the Heineken in the green bottle, but the Heineken in the brown bottle is good for flavoring meat dishes. Leaves kind of a soy sauce flavor.

You�ll need:
6 oz. frozen orange juice
1 tsp. Vanilla
1 c. cold milk
1 c. cold water
� c. sugar
8-9 ice cubes

Blend in blender and enjoy.

1 12-oz. can of frozen lemonade

2 10-oz. cans of water
2 qts. ginger ale

Blend strawberries, lemonade, sugar and water in blender. This makes your concentrate. When ready to serve, mix concentrate with ginger ale and add plenty of ice.

STRAWBERRY-KIWI SMOOTHIES

Did someone say they needed Vitamin C?

You�ll need:
1 � c. orange or white grape juice
� c. yogurt (strawberry, lemon, mixed berry or plain would all work)
5 or 6 frozen strawberries
1 kiwi, cut into chunks

Put everything into blender and blend until smooth. Add more juice until you get the desired consistency. Pour in glass and enjoy.

THAI ICED TEA

You�ll need:
4 tbsp. Thai tea
2 c. water
4 tbsp. sugar
4 tbsp. sweetened condensed milk
Half and Half as desired

Brew the tea and water in a coffee maker. Dissolve the sugar and condensed milk in the tea. Refrigerate.
To serve: put � c. ice in each glass. Add the brewed tea and some Half and Half.
