APPLESAUCE MUFFINS

1 cup applesauce (bottled or homemade)
1� cups all-purpose flour
1 tsp salt
1 tsp baking powder
� cup shortening
1 cup white sugar
2 eggs, beaten
1 tsp vanilla
1 tsp baking soda
� tsp cinnamon
� tsp nutmeg

Preheat oven to 350* F. Cream sugar and shortening, then blend in applesauce, eggs, and vanilla. Combine dry ingredients together, and gradually, add to wet ingredient mixture. Fill muffin cups 2/3 full, and bake for 25 minutes.

BANANA LOAF

1� cups all-purpose flour
1 tsp baking soda
� tsp salt
� cup shortening
� cup brown sugar
1 egg, beaten
3 large ripe bananas, mashed

Preheat oven to 350*F. Mix dry ingredients together in a small bowl. In a large bowl, cream shortening and sugar. Add beaten egg, then bananas. Fold in dry ingredients. Pour batter into a greased loaf pan and bake for 35-40 minutes.

BEER BREAD

I got this recipe from my mother-in-law, and I have no idea where she got it, but it's very quick and easy and turns out awesome.

3 cups self-rising flour
3 tablespoons sugar
� teaspoon salt
12 oz. beer

Mix them up, put in a loaf pan. Bake 55 minutes at 350 degrees. Brush top with butter; bake 5 more minutes and voila!

You can also add cheddar cheese to taste.

CINNAMON LOAF

3 Tbsp sugar
1 Tbsp cinnamon
� cup butter
2 eggs, beaten
1 cup white sugar
2 cups flour
� tsp salt
1 tsp baking powder
� tsp baking soda
2 tsp vanilla
1 cup milk with 1 tsp vinegar added

Set aside combined 3 tablespoons sugar and cinnamon. Cream butter and sugar. Add eggs and mix well. Add dry ingredients alternately with milk. Beat well, and then add vanilla. Spread half the batter in a greased loaf pan. Cover with half of the cinnamon sugar mixture. Spread the remaining batter, then top with the remaining cinnamon sugar mixture. Bake at 350* for 1 hour.

ORANGE CREAM CHEESE BREAD

(Makes 2-8x4 loafs)

1 8 oz. package softened cream cheese
� cup shortening
1 2/3 cups sugar
2 eggs
2� cups flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
� cup chopped nuts (optional)
2 tablespoons orange rind
� cup orange juice

Cream shortening and cream cheese together. Add sugar and eggs and beat well. Add rest of ingredients and mix. Put in greased and floured loaf pans. Bake at 375 for 55 minutes.

TEA BISCUITS

4 cups all-purpose flour
8 tsp baking powder
1 tsp salt
1 cup shortening
1� cups milk
1 egg
4 Tbsp sugar

Mix all dry ingredients together, and then blend in shortening. Make a well in the centre, and add milk and egg. Mix with fork until dough forms. Turn out onto floured surface, and knead very lightly. Flatten to about 1", cut out, and place on an ungreased baking sheet. Bake at 425 until done.

HONEYCHILD�S
TOTABLE SAUSAGE MUFFINS

(Great for Brunch (my favorite meal!)

You�ll need:
12 oz bulk pork sausage
3� c. biscuit mix
1 c. shredded Swiss or cheddar
� t. thyme
� t. pepper
2 slightly beaten eggs
1 c. milk

Prep:
1. Lightly grease muffin pan.
2. In a large skillet, cook sausage until no longer pink; drain well.
3. Stir sausage, biscuit mix, cheese, thyme and pepper together in large bowl. Make a well in center of mixture.
4. In another bowl, stir together eggs and milk. Add this to the dry mixture and stir just until moistened. Spoon the batter into the muffin cups.
5. Bake at 375 for 20 minutes. Serves 24.
