"Potato Crescents"

Now, this dish will take a little more prep time than the others, but it is different and no one will believe they were made out of mashed potatoes.

4     medium potatoes ( cooked and peeled)
1 1/3 cup of flour
1/3   cup cornstarch
2     tsp of baking powder
1     egg
4     tbsp of butter or  margarine
1/3   cup of sugar
1     tsp of vanilla extract
4     tbsp of strawberry jam
5     tbsp of powdered sugar

After the potatoes are cooked, mash them until there are noooooo  LUMPS ! 

Dump them onto your counter top ( I know, what a mess right)

Sprinkle the flour,cornstarch,baking powder, and sugar over it.

make a well ( punch it and make a hole, not too deep though, you just want it to hold your liquid ingredients).

Drop in the egg and the vanilla extract.  Cut the butter or margarine into slices and place it over the whole mess.

Now here is where it gets ucky, take your rings etc off of your hands and start kneading this mixture until it turns into a smooth dough, and it will !  If you need to, add some more flour if the dough is too sticky.

So now, roll it out to 1/8" thickness and cut into triangles.  Spread the Jam on the widest side of the triangle and roll up into crescents.

Place crescents on a greased cookie sheet and bake in a preheated oven at 375 Degrees for 20-25 minutes or until golden brown.

While cookies are still warm sprinkle powdered sugar over them.

Makes approximately 60 cookies
