Chocolate Slab Cake

1 c. butter
3.5 oz. chopped semisweet chocolate
2/3 c. water
2.5 c. all-purpose flour
1 2/3 c. soft brown sugar
2/3 c. sour cream
2 beaten eggs

Frosting:
7oz. semisweet chocolate
6 tsp. water
3 tsp. light cream
1 tsp. chilled butter

  1. Grease 13x8 square cake pan and line the bottom with baking parchment.  in a pan, melt butter and chocolate with water over low heat (stir often).
  2. Sift flour and baking soda into mixing bowl.  stir in sugar.  pour the hot chocolate liquid into bowl.
  3. Beat until evenly mixed.  Stir in sour cream.  Add beaten eggs.  Mix well.
  4. Pour into prepared pan.  Bake in preheated oven at 375°F for 40-45 minutes. 
  5. Let the cake cool in the pan before turning it onto a wire rack to cool completely.
  6. Frosting: melt chocolate with water in pan over very low heat.  stir in cream and remove from heat.  stir in butter, pour frosting over cooled cake, using a spatula to spread it over the top.

French Chocolates
(makes 50-60 candies)

1 pkg. (12 oz.) semisweet chocolate chips
1 c. ground walnuts
3/4 c. sweetened condensed milk
1 tsp. vanilla
dash salt
shredded coconut, chopped nuts, or powdered sugar

  1. Place chocolate chips in medium bowl.  microwave at MEDIUM-HIGH (70%) until melted (2-3 minutes) stirring twice.  stir in walnuts, condensed milk, vanilla, and salt. cool 5 minutes.
  2. shape into 3/4- to 1-inch balls.  Dip into coconut, nuts, powdered sugar.  place on greased baking sheet and refrigerate until set.
