The Good Friday tradition of San Fernando's Mater Dolorosa traces its roots to Don Florentino Dayrit and Doņa Antonina Pamintuan. Although the original statue used in the processions was destroyed during the war, the descendants continued the tradition. (1) DON FABIAN DAYRIT who was gobernadorcillo of Lubao in 1821. His first marriage was to DOŅA PETRONA DABU in 1815. No children have been discovered from this marriage but Don Fabian had an illegitimate child with NICOLASA JIMENEZ.

FULGENCIA JUAN y CONCEPCION in Mexico, Pampanga in 1846. Their children include:

(1.3) DON MARIANO DAYRIT (c. 1851) who married DOŅA MARIA SINGIAN. Don Mariano was born around 1851. He graduated from the Colegio de Santa Tereza de Jesus, which later became the Pampanga School of Arts and Trades. He was a caveza de barangay and served as tiniente de barrio of San Jose and jefe del pueblo de San Fernando in the Revolutionary Government of Governor Tiburcio Hilario. It is said that he helped the revolutionary forces with timber from his lands which they used as barges for transportation along the San Fernando River. He died on 4 April 1907 of tuberculosis.

(2) DON JUAN DAYRIT who was gobernadorcillo of San Fernando in 1839. It is also believed that Don Juan married a Binuya from Apalit. A possible child of Don Juan is:

DON FLORENTINO DAYRIT may be another son of Don Vicente by a second
marriage to a Binuya. He married DOŅA ANTONINA PAMINTUAN y OCAMPO. He continued the political line, serving as gobernadorcillo of San Fernando in 1858-59, 1871-72, and 1882-83, before dying in 1896 at the age of 72.

Unknown to many, the original Pampango versions of these famous delicacies came from Salud Dayrit de Santos, known during her time as the best cook in the town of San Fernando. She made her own concoctions of the ensaymada, plantanilla, nogatines, petit fors, empanaditas, and tocino del cielo, recipes passed on to her daughter Felicidad Santos, and later to her daughter-in-law Catalina Magat-Santos.
