Beer

We have indeed gone back to 10 gallon batches after realizing that it is necessary to collect 12 gallons pre-boil, and we only have a 10 gallon brew pot. We continue to fall short of our final volume goals. We're not quite certain why we're only collecting about 4 gallons after boil instead of 5. We may just need to begin the mash with more water.

Currently we are in the final stages of a "left-over ale." As we were trying to decide upon a brew, we inventoried our supplies and simply decided to take all the grains we had left-over from past brews and find out what they would create. We also have a load of chocolate malt and added a bit to the grain bill for color.

Sadly, we failed to add the Irish Moss to the boil. However, it really is quite clear right now. We started this on April 30. A bit long for fermenting, we know, but to what harm, I ask you?

Hops

Our hop plants (cascade and saaz) are growing very well. Last year gave some yeild, but we didn't use any for brewing. They are back this year and growing quite well (the picture above is from May of this year). By the end of this year we may actually attempt to use the hops in a batch or two.

Mead

We did bottle half of the mead for a friend's wedding, giving them a moon's worth, which was set on the reception tables. The happy couple was able to take a few bottles home for themselves. None-the-less, we still have a semi-active fermenter full of mead waiting patiently for us to do something with it.
