| American Deputy's Potato Salad 10 boiled eggs, separate cooked yolks into large bowl, mash to this add: 1 chopped red onion 1 large sweet tomato, chopped 1 Tbs. sweet pickle relish 3 stalks celery, chopped 8 slices bacon, crumbled 1 1/2 cups real mayonnaise mixed with 1 Tbs. bacon drippings 1 tsp. garlic powder 1/2 tsp. dill weed 1 Tbs. paprika coarse black pepper ,salt to taste Mix well in large bowl. Add 8-10 red potatoes,boiled in skin and cubed, and chopped egg whites. Combine gently, garnish with additional dill and paprika. Additional tip:Exclude the potatoes, chop everything very small, add 3/4 cup of sour cream, and you have a wonderful house salad dressing. or dip for crackers and bread. If you prefer macaroni salad: substitute macaroni shapes for the potatoes. The possibilities are endless!!!! |
| Bentalphanerd's Thai Green Chicken Curry 1 kg (2.2 lb) chicken breast Thai Green curry paste ( many out there - look at the back of jar - good 1 will only need about 2-3 Tspns 500 gms & will contain ingredient Galangal 2-3 hands of Snow Peas 2 Sweet (or banana) chillies Fish Sauce Large tin Coconut Cream (not milk & not Lite, shake the can, make sure it sounds thick) fresh Basil ( red is best, but green will do) fresh Coriander ( pick a piece of leaf & smell, does look like Italian Parsley) 1 Red Capsicum ( Red Pepper ) Sesame Oil 2 teaspoons chopped garlic 2 teaspoons chopped ginger If u like it hot:cayenne pepper-Hot paprika-3-4 birdseye chillies In lrge-deep frypan heat sesame oil(1 Tbspn for non-stick, 3 if not)| add garlic, ginger & 2 heaped Tbspns curry paste. raise to high heat & stir together| add chicken cut into large bite size pieces & stir rapidly till just losing pinkness, add coconut cream, 3-4 Tbspns of Fish Sauce (sounds bad, but will stop the cream from going funny) add handful of chopped Basil, reduce heat to a low simmer & stir it all in. Add Sweet Chillies sliced into 1-2 cm rings & Capsicum cut in long throngs. simmer till cream reduces (aprox 20 mins) Stir occasionally, dont let the chicken get dry. When rice is nearly ready, Add Snow peas (whole, just chop ends off) & chopped Coriander to taste ( Coriander will reduce the heat of curry & add flavour) I add about 2 handfulls. These should not be added any later than 5 mins before u serve so that they are still crisp. With the rice i like to add a cup of frozen peas & corn to the mix - adds colour :) Ring the rice around the plate, and spoon curry into middle. Garnish with Coriander leaf & birdseye chilli. If you make it right it will not taste hot like chilli, but warm and herbal until you finish eating then it may get warmer for a while. If u like it hot: roll the raw meat in cayenne pepper & Hot Paprika| After adding cream, add the seeds of as many birdseye chillies as u think u can cope with. Remember You can always add more Coriander to tame it :). |
| Alpha's Stuffed Bell Peppers 1 1/2 sick butter 1 cup onion 1 lb shrimp or crawfish tails 4 ribs celery 2 cloves garlic 1 cup beef broth 1 1/2- 2 cups seasoned bread crumbs a dab of tobassco sauce 1 egg beaten salt and pepper sautee vegetables in butter, add broth and tails, mix, add rest of ingredients take off heat. add egg then stuff bellpepper. bake 350 for 20 mins ull need 6 nice size bell peppers for this, cut off end of pepper thats not flat, boil the peppers just to sofen a bit |
| Alpha's Bread Pudding 3 cans evaporated milk (12.5 or 14 oz cans) 3 cups sugar 1 tablespoon vanilla 1 dozen eggs 2 tablespoons cherry juice 1 loaf of po-boy (french) bread let it ge stale (hard) diced up 1/2 stick butter 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1/2 cup raisins & cherry pieces pour all the above liquid over the bread, mash bread with fingers and let soak for 30 mins. add 8 oz. cherries in pieces and raisinsand mix up. take 1/2 cup of brown sugar ull need brown sugar and sprinkle it on top (do not mix it). also sprinkle some liquid butter over the top.bake for 1 hour @ 350 when it rises shut off heat and let sit in oven topping: 1 large box vanilla cook n serve pudding. cook as per instructions then add 1/2 shot of rum and mix |
