| SALLY'S GRILLED BABY BACK RIBS 4 racks baby back ribs 1 head garlic, crushed (or you can use bottled, pre-crushed garlic) 2 bottles mesquite flavored barbecue sauce In a large marinating container with a cover, pour some of the barbecue sauce. Place one rack of ribs over the sauce. Spread some of the crushed garlic over the rack, then pour some barbecue sauce on top. Repeat with the remaining ribs, garlic and barbecue sauce, ending with barbecue sauce. Let the ribs marinate in the refrigerator for several hours or overnight, turning and shaking the container occasionally. Heat the grill to medium hot and cook the ribs with the cover of the grill down for 20 to 30 minutes on each side, until done. Ribs are done when you can cut between the bones in the center of a rack and there is no pink meat. They will be browned and crisp on the surface. Note: If you have the time and you want to have more tender, melt in your mouth, fall off the bone ribs, let the ribs cook for about 20 minutes on each side over a medium hot grill. Remove them to a disposable aluminum baking pan and pour any remaining barbecue sauce over them. Cover the pan with heavy duty foil and lower the heat on the grill to low. Put the pan on the grill with the cover down and let them continue cooking slowly for a couple of hours. When you are ready to serve them, remove them from the pan and return them to the grill top briefly to brown them up. Serve them sizzling hot and enjoy!! |
