SPRING SALAD
       
Serves 6

          1 head red leaf lettuce
       1/2 pound fresh muscalen greens
             (also called spring greens)
          1 small red onion, thinly sliced
          1 cup cantaloupe, cut into small cubes
       1/2 cup dried cranberries
       1/2 cup coarsley chopped walnuts
       1/3 cup crumbled bleu cheese
          1 cup olive oil vinaigrette
             salt and pepper to taste
   
Wash, dry and tear up the red leaf lettuce.  Combine it in a large salad bowl with the
muscalen greens.  Add the remaining ingredients and toss with the olive oil vinaigrette
and salt and pepper to taste.
