IRISH SODA BREAD
WELCOME TO MY WEBSITE!  It's so good to see you again.  Stay a while and Lets
have a cup of coffee!!
This is a fruited Irish Soda Bread.  It's called "soda bread" because it is leavened with baking soda instead of yeast.  A traditional coarse-textured bread, it can be served as a coffee-cake or snack with tea or coffee.  It's great with jam or lemon curd, and it is especially delicious toasted.

IN THE KITCHEN ~  WITH MOM is my first cookbook!!  It was printed in December 1999.  It is a collection of 173 recipes that I have developed and acquired over the years from family and friends.  All the recipes featured  in "Recipe of the Month" come from the book.  The book has been reprinted, and is now available for $19.95, which includes shipping and handling.
RECIPE MAKE-OVER
One of my favorite recipes from my cookbook is my Aunt Toula's PASTITSIO, but it's not weight watchers friendly.  I decided to try "lightening up" the recipe, and I am so pleased with the results...I think you will be too.  Eat this without guilt!!!
