                   BAKLAVA
HAPPY NEW YEAR! This month's recipe is BAKLAVA. With its flaky golden layers of phyllo and honey-nut filling, it is perhaps the best known Middle Eastern dessert.

WELCOME TO MY WEBSITE! I'm so glad you could stop in!! Stay a while and let's have a cup of coffee! This month's recipe, BAKLAVA is claimed by almost every Balkan State as its own invention. Most people in the United States first encounter it in Greek restaurants. It probably originated in Turkey sometime before the 16th Century. Its popularity can be traced to Topkapi Palace in Istanbul where, during the reign of the Ottoman sultans, the ruler, his ambassadors and soldiers favored it. At Topkapi, baklava's preparation was considered so crucial that a specially-trained chef created the dessert in a separate palace kitchen! But don't let this dissuade you from making it. Anyone with the most rudimentary of kitchen skills can make BAKLAVA! The most important thing to remember when working with phyllo dough is to not let the sheets dry out, and covering them with a damp towel will keep them soft and pliable while you are assembling your masterpiece!
