Za`atar Flat Pie

Ingredients

2 tablespoons Za'atar [You can get Za'atar from any Middle Eastern store]
¼ cup chopped ripe tomato
¼ cup chopped onion
1 teaspoon olive oil
2 tablespoons lemon juice
1 loaf unbaked bread

 

Directions

  1. Punch out one unbaked loaf of bread dough ~~ Will give recipe for bread below this recipe~~

  2. Mix the Za'atar, tomato, and the chopped onion with oil and lemon juice. Roll the dough into circular loaves 1/4 inch thick.

  3. Pour the Za'atar mixture on the dough and smooth it evenly over the surface, pressing it gently with a fork. Place loaf on a cookie sheet and bake at 550 for 10 min. or until the edge of the loaf is golden brown. You might want to reduce the oven temp. I have burned the bread in the first 2 min with the oven that high.

 

BREAD
1 tablespoon yeast
1 tablespoon sugar
2½- 3 cups warm water
5 cups all purpose flour
1 cup whole wheat flower

 

  1. Dissolve the yeast and the sugar in ½ cup warm water. Let stand for 2-5 minutes. Place both flours in a large bowl and combine with some of the water and dissolved yeast. Begin mixing and kneading adding water sparingly until a smooth dough results and the sides are clean.

  2. Cover with a towel and allow the dough to rise in a warm place until it doubles in size. Cut orange size balls from the edge of the dough and form them in to smooth balls. Cover and let them rise for 30 minutes.

  3. Roll in to 1/4 inch thick flat loafs and allow them to rise again for 45 minutes. Place the loafs on a cookie sheet or if you have a baking stone that is best but if you use a baking stone the oven temperature should be 550 if you use a cookie sheet reduce the heat to 450.

  4. As soon as the loafs puff up remove them from the oven and allow them to cool.
