Southern Yam Cauliflower Bake

Ingredients

4 medium sweet potatoes
1 head cauliflower cut in florets
¼ cup butter or margarine
1 cup milk
1 teaspoon pepper and nutmeg
¾ cup celery
½ cup sliced onion
¼ cup all purpose flour
1 teaspoon salt
1½ cup shredded cheddar cheese

Directions
Add sweet potatoes to boiling water, cover, bring to boil, lower heat and simmer in covered sauce pan. Drain, slip off skins and slice.

Add cauliflower florets to 1 cup boiling water; bring to a boil. Lower heat and simmer until tender, about 5 to 8 minutes total cooking time. Sauté celery and onion with melted butter until tender. Blend in flour. Gradually blend in milk and cook, stirring constantly until sauce boils 1 minute. Stir in seasoning and 1 cup cheese. Cook stirring until cheese melts. Pour ½ cup sauce into 2 quart casserole; arrange yams and cauliflower on sauce. Drizzle over remaining sauce; sprinkle with remaining cheese. Bake uncovered at 375 degrees Fahrenheit for 15 minutes or until bubbling hot. Yields 4 to 6 servings.
