This is a traditional Saudi recipe it is very common during Ramadan.
Ingredients
One package triangle pastry (This is a thin pastry like
filo dough.
You can find this in International markets in your community. If it
cannot be located you can use filo dough instead. If you do use the filo dough you should cut into long strips. You will need to fold
the dough much like you fold a triangle paper football.)
Ground meat (Hamburger, chicken, or lamb)
Pine nuts
Salt and pepper to taste
Cumin
Parsley
1 onion chopped
Oil to fry (I find the best oil to use is corn oil)
One tablespoon flour and ¼ glass of water mixed together and used to glue edges of pastry after it is stuffed and
folded
Directions
-
Sauté onions in a little bit of olive oil, when they are transparent
add the ground meat and spices and cook until almost done at this point add the pine nuts and the parsley cook until they are done.
-
Place 1 tablespoon of meat on the end of the pastry and then roll in to the shape of a triangle. Tuck in the ends and use the flour mixture
to seal.
-
Deep fry on
medium heat until golden brown.
-
Drain on a paper towel and serve for Iftar or any other time.
Cheese filling
Feta cheese (Feta has a strong taste so you can add a little cottage
cheese to the feta, you can also use cream cheese mixed with the
juice of half a lemon)
Parsley
Salt
Pepper
Mix together well and then wrap in dough as stated above.
* You can also add carrots to the cheese or tomatoes. Just be creative :) also chopped boiled eggs can be added to the meat or pieces of pickle.
