Ingredients

Salmon (1 large fillet)
Zest of 3 lemons 
Black pepper
Salt
Olive oil

 

Sauce:

1 cup chopped walnuts (more if desired)
1 teaspoon coriander seeds, crushed
2 cloves garlic, crushed
1 spoon red pepper sauce
Juice from the 3 lemons 

 

Directions

  1. Rub salmon with lemon zest, black pepper and salt, and a little oil on both sides. Let marinade at least 30 minutes, the longer the better.

  2. Bake in 400 degree oven for 5 minutes, then reduce heat and bake at 375 for 10 minutes and broil another 5 minutes or until the topside is bubbling and is reddish in color. Take out of oven.

  3. While baking, prepare sauce: Fry walnuts, seeds, garlic and red pepper in oil until well blended and thickened a bit. Add lemon juice.

  4. Place sauce over fish and return to oven (375 degrees) and bake for 15 minutes or until fish is done and sauce is thickened. 

    Makes about 8 servings.
