Rice
with Chicken & Humous

Ingredients
2 chickens cut in halves
5 glasses of rice
2 glasses split yellow humous (chick-peas)
1 glass of fat or oil
4 minced onions
10 glasses of water
1 tablespoon crushed garlic
3 cinnamon wood sticks, whole
6 cloves, whole
10 cardamoms, whole
1 tsp cumin
1 tsp pepper
1 tsp dried coriander
2tbls salt or as desired
Water to boil humous
Directions

Soak humous in hot water.
Wash chicken.

Heat ¾ of a glass oil add onion, chicken, and garlic. Stir and leave
to cook until oil is dried up.

Add water, salt and spices and let cook until chicken is done.

Drain humous and put in a pan and cook until it is half done.

Remove chicken pieces from the broth and place in an oven pan.
Remove the whole spices from the broth.

Wash rice well and add it to the broth and leave to cook on low heat.

Heat ¼ glass fat and when it is hot pour over rice and cover pan lid
immediately.

Prepare large serving dish, place
homous on a separate plate.

Stir rice and place in serving dish and place homous around the sides
of the dish.

Place roasted chicken on top of the rice and serve.
