Lentils with Vegetable Soup

Ingredients

¾ glass red lentils
2 small peeled and cut to small pieces
1 tomato med. cut in four pieces
2 potatoes, peeled and cut into small pieces
1 onion medium cut in to four pieces
1 small minced onion
1/3 glass oil
1 cube Maggi chicken stock
1 teaspoon cumin
1
teaspoon salt or more if desired
7 glasses of water

Directions

  1. Clean lentils and put into pan and add all vegetables. and water. Bring to a boil and then add garlic. leave to simmer until vegetables are tender. Remove from heat and leave to cool a little use an electric mixer or a blender and mix until smooth.

  2. Return to pan, add Maggi, cumin and salt. Heat oil, add onion, stir until golden.

  3. Add onions to the soup and leave to boil for 4-5 minutes. Put in bowls and serve.
