Meme's Gnocchis
I make Gnocchis (pronounce "neeO-kee") every year. It became part of our family Christmas Tradition. This is my Great-Grandmother's Recipe ( her nickname was "Meme") to make Gnocchis the old fashion way... The best way! It requires a little work but it sure is worth it!

Ingredients:

- 1 kg white potaoes (ripe)
- 500 gr all purpose white flower
- 1 Tbsp Olive Oil + 1 Tbsp
- 1/4 tsp salt
- Tomato sauce (my Home Made Recipe here)
- Powdered Parmesan or Romano Cheese
- 2 packages shredded Pizza 4 cheeses mix (shredded Swiss Cheese - Gruyere - is best)
- Butter

Instructions:

In a large deep pan, boil brushed and rinced potatoes with their skin. Let cool down a little in a colander and peel the skin off.

In an large bowl, mash the potatoes (PHOTO) and pour the flour, the olive oil and the salt. Hand mix well until you obtain a compact bowl of dough that you put on a clean large and clear counter or table.

Now comes the fun part! [smile]

With floured hands, take a bit of dough, roll it on the counter as a long thin snake, and with a knife cut bite size pieces.

IMPORTANT: Dispose the uncooked gnocchis on a well floured counter or table to avoid chocchis to stick to eachother and do not pile them.
In the meanwhile, in a large pan, bring to a boil some salted water and 1 Tbsp of olive oil.

Reduce heat to high medium and add Gnocchis in the water ONE at the time, holding them gently.

IMPORTANT: No more than 20 or so Gnocchis at the time in the pan.

When they float in the water, they are ready to be picked up and layed in a large oven pan. As simple as that! [smile]

Cook all the gnocchis, inserting few chunks of butter between layers of gnocchis. PHOTO
When they are all cooked, cover with a thick layer of sauce,

... spread some Parmesan or Romano cheese over the sauce

... and finally cover with a layer of shredded Gruyere or Pizza 4 Cheeses mix.

Put that plate in medium oven for 30 minutes or until cheese melts... ET VOILA!


You can also freeze that plate for ulterior use or cover it with aluminium foil and keep it in the fridge for few hours until dinner time!

As leftovers can also be frozen and kept for weeks in a tight plastic container, I usually make 2 plates of gnocchis. They are great quick micro-wave warm-up dinners (but HUSH... don't tell Meme!) when I am in a hurry or if I have surprise guests!
