Latkes
(Grated Potato Pancakes)
Ingredients (6 servings)
6 Medium potatoes
1 Onion
2 Eggs
1/2 c Flour
1 ts Salt
Vegetable shortening or Oil for frying
Instructions

Pare and grate potatoes into a mixing bowl.

Squeeze out liquid.

Peel and grate onion into potatoes.
-
Add eggs, flour, and salt and stir to make
a smooth batter that will drop heavily from the spoon.

Heap the shortening in a heavy frying pan
using enough to cover the pancakes amply.
-
Drop the batter from a spoon into the hot
shortening, making pancakes 3 inches in diameter.
-
Fry over moderate heat until brown on the
underside, turn to brown.
-
Life out and drain off excess fat on paper
towel.

Pancakes fried in deep fat should be puffed
and crisp.

These pancakes may also be baked in a shallow
baking pan for 45 minutes at 350F until nicely browned.

Cut into squares and serve hot.

They may also be put into a well greased small
muffin pan and baked 45 minutes at 350F.
Irish Stew
Ingredients(6 servings)
2tb oil
4 lg Onion cut in wedges
5 lg Carrots cut in thick slices
2 Rib celery sliced
1 1/2 lb Round steak or lamb
6 lg Potatoes
1 c Water
Instructions

Salt and pepper to taste

Heat oil in large saucepan or skillet.

Saute onions in oil.
-
Add carrots and celery and cook for a few
minutes.
-
Cut steak into 1/4 to 1/2 inch cubes and add
to onions, carrots and celery.
-
Wash, peel and slice potatoes and add to pot.
-
Pour in water, season to taste with salt and
pepper and bring to a boil.
-
Skim of any foam, reduce heat and simmer over
low heat until meat and vegetables are tender.
-
NOTE: Can also cook in crockpot on low overnight,
7-8 hours, or on high for 3 4 hours.

If desired, stew can be thickened by mixing
2 tablespoon flour with a little water and adding it to the stew.

Heat through until thickened and serve piping
hot.
Irish Cream Cheesecake
Ingredients (10 servings)
1 c Graham Cracker Crumbs
1/4 c Sugar
1/4 c Margarine, melted
1 ea Env. Unflavored Gelatin
1/2 c Cold Water
1 c Sugar
3 ea Large Eggs, Separated
16 oz Cream Cheese, Softened
2 tb Cocoa
2 tb Bourbon
1 c Whipping Cream, Whipped
Instructions

Combine graham cracker crumbs, sugar, and
margarine; press onto bottom of 9-inch springform pan.

Soften gelatin in water, stir over low heat
until dissolved.

Blend in 3/4 cup sugar and beaten egg yolks;
cook stirring constantly, over low heat, 3 minutes.
-
Combine cream cheese and cocoa, mixing at
medium speed on electric mixer until well blended.
-
Gradually add gelatin mixture and bourbon,
mixing until well blended.
-
Chill until thickened, but not set.
-
Beat egg whites until foamy; gradually adding
the remaining sugar, beating until stiff peaks form.
-
Fold egg whites and whipped cream into cheese
mixture and pour over crust.
-
Chill until firm.
-
Garnish with chocolate curls and small silver
candy balls, if desired.

VARIATION: Substitute 2 T cold coffee for
bourbon.
Treasure Stone
Craft
Materials Needed:
1 cup flour
1 cup used coffee grinds
1/4 cup salt
1/4 cup sand
1 cup water

Instructions:

Mix all ingredients into a dough.
-
Knead on a floured surface until fairly smooth.
-
Break the dough into desired rock sizes.
-
Hide toys and surprises in the center of a
ball of dough.
-
Set in a safe place until totally dry for
at least 3 - 4 days.
-
Once it is dry, the dough will look and feel
like a rock.
-
You can carefully break open the home-made
rocks with a hammer to reveal the hidden treasures inside.
