| Places to hold your cookout party/get together: - Beach - Pool - Near a lake - Or simply out camping in your own backyard! (Just set up your tent in the backyard, roast marshmellows on the grill, and sit around and tell ghost stories.) Family Fun: Slushies are a good way to get cooled off, especially on the fourth of July in the middle of summer! Ingredients: 1 package of unsweetened Kool-aid drink mix of any flavor 2 cups of water 1/2 - 3/4 cup sugar 4 cups ice Directions: In a blender, combine Kool-aid, water and sugar. Blend. Add all the ice and blend. Pour into cups, add a straw and enjoy on those hot summer days. Some things to cook on the 4th of July: Since I don't contribute to buying regular hamburger meat, instead I buy tofu hamburger meat, which tastes just the same, and is a lot less fattening! Besides having tofu hamburgers, I also like to get meatless hotdogs that are a lot healthier than regular hot dogs. So this 4th of July, be different! Get a grill and cook some tofu, you'll love it. =) Nouveau Sloppy Joes Ingredients: 1-2 Tbsp. vegetable oil 1/2 cup minced onion 1/2 cup minced green bell pepper 1 lb. firm tofu, frozne, then thawed and mashed 6 Tbsp. ketchup 6 Tbsp. chili sauce 1/2 tsp. salt Pepper, to taste 4 burger buns, lightly toasted Directions: Heat the oil in a large skillet over medium heat. Add the onion and green pepper and saute until the vegetables are well cooked, about 5 minutes. Add the tofu and saute for another 15 minutes, until the tofu is completely cooked. Add the ketchup, chili sauce, salt, and pepper and continue to cook over low heat until the mixture is heated through. Add a little water if the mixture is too dry. Spoon onto lightly toasted burger buns. Black Bean Chili Ingredients: 1 large onion, chopped 2 cloves garlic, crushed 2-3 Tbsp. olive oil 1 lb. mushrooms, sliced 1 green bell pepper, chopped 1 green chili pepper or jalapeno, chopped 1 16-oz. can black beans 1 16-oz. can crushed tomatoes 1/2 cup textured vegetable protein Chili powder and salt, to taste Directions: In a large pot, saute the onion and garlic in the oil until the onions become soft. Add the mushrooms and saute for 5 minutes. Add the peppers and saute for a few more minutes. Add the black beans, tomatoes, textured vegetable protein, chili powder, and salt and simmer for 30 minutes. Pasta Salad Ingredients: 1 8-oz. package of tri-colored pasta, cooked 3 ears of cooked corn, with the kernels cut from the cob 1 bunch broccoli florets, cut small and steamed 15 large black olives, sliced 15 green olives with pimento, sliced 1 14-oz. can artichoke hearts, halved 1 red pepper, diced 1 8-oz. can water chestnuts 1 15-oz. can chickpeas, rinsed and drained 1/4 cup Italian dressing or more, to taste Directions: Combine all the ingredients, mix well, and refrigerate. Serve cold. Dark Chocolate Mousse Ingredients: 1 lb. soft tofu 1/2 cup cocoa powder 1/4 cup carob powder 6 Tbsp. sugar 1/4 cup soy milk Directions: Combine all the ingredients in a blender or food processor and puree until creamy. Pour the mousse into six individual bowls and chill. |
