::SINGAPORE::

It�s been awhile since I got back from Singapore. Almost four months now. Sigh* I miss Singapore so much. I�m very lucky to get the opportunity to have training in Singapore. The experience is wow! I was attached to Raffles Hotel, Singapore�s Grand Historic Hotel. The attachment is for 6 months. I arrived in Singapore July 24 last year. My first week is already a blast. I and my new found friends went to Ministry of Sounds. The party people there are very different compared here in the Philippines. I must admit, I was hooked to MOS. I was amazed with their �glow in the dark� ink stamp/mark. You know when you go to bars and they would put stamp/mark on your wrist as a sign that you already got in? In MOS, when you�re outside you can�t see the stamp/mark but when you get in, it glows. Cool. No more removing messy stamp/mark before going home to avoid being caught. Hahaha.
People in Singapore are very workaholic but they party a lot too. My colleagues would give me free tickets to party clubs like CUBE. Some clubs give exclusive invites to restaurant managers. It�s their way to get acquainted with one another. They give a lot of exclusive invites. Sometimes I get four or five. Cool!
But I don�t only party when I was in Singapore. I really had training. My first three months, I was attached to Doc Cheng�s. It�s a fusion restaurant featuring Western cuisine with Asian twist. I love this restaurant. There are a lot of interesting things in Doc Cheng�s. The name itself is interesting, who is Doctor Cheng? They say the story of Doctor Cheng is true, they say it�s only fictional. But what I I know based from Raffles Hotel History, There is really Doctor Cheng. He�s one of Raffles hotel avid guest. So they named one of the restaurant Doc Cheng�s as a tribute. It�s a fusion restaurant so you expect fusion in all aspect. True. From exterior to interior decorations it�s a mixed of Western and Asian. Even glass wares, dinner plates and cutleries are design to show fusion. I personally love the cutleries. The other half is chopstick and the other half could be fork, spoon or knife. Cool.
The main chef of Doc Cheng�s is Chef Samuel Wilkes of New Zealand. He�s very good. I like him a lot. Aw! Hahaha. Every afternoon, during briefing we get to sit down with him and talk about his dishes so that we know what we are selling and serving. While working there the menu changes often so you need to study in order to know your products as soon as possible. How the food is made, what are the ingredients, with what kind of wine goes well with it? And even a story of a certain dish you need to know. Of course, we should know how it tastes, to do that, we have food tasting. Yum yum!
After three months in Doc Cheng�s I was attached to Raffles Grill. It�s a French Fine Dining Restaurant. I didn�t get to enjoy working here that much because I didn�t get the chance to interact with guest as I was in Doc Cheng�s. Most of the times, only my maitre d, the headwaiter and the captains get to interact more. We also get to have Filipino guest. Cool.

Well, I don't want to breakdown or waste my time thinkin' about my problem so I decided makin' a new web page for myself. ::1st Place::




Bangus Fillet with Nuts, Peaches, Cheese and Peas Rolled and Wrapped in Bacon

Ingredients:

1 kilo Bangus Fillet
1 cup Pineapple Juice
1 cup Sprite
� cups Orange Marmalade (optional)
1 cups Nuts, ground
1 cups Peach, sliced. (reserve syrup)
1 cups Cheese,chopped
1 cup Green Peas
� kilo Bacon Strips
Vegetable Oil

Sauce

2 cup reserve syrup
� cup ground nuts
� cup peaches, sliced


Procedure:

1. Combine pineapple juice and sprite. Marinate bangus fillet over night.
2. Drain fish fillet. Combine orange marmalade, peaches, nuts, cheese and green peas. Spread into the fish fillet.
3. Roll and wrapped the bangus fillet with bacon strips. Secure with toothpick or strings.
4. Deep fry until golden brown.
5. For the sauce, just combine all the ingredients. Serve on the side.
