| Apple Pie (was 9 points per serving, now 4 points per serving-from WW site) 1 c. all purpose flour 2 tsp sugar 3 Tbsp reduced calorie margarine, chilled and cut up 2 Tbsp water (more if necessary) 4 medium Macintosh apples, peeled and thinly sliced 1/4 c. of sugar 1 Tbsp cornstarch 1/2 tsp ground cinnamon 1/3 c. old fashioned oats (uncooked) 5 Tbsp all purpose flour 2 Tbsp sugar 2 Tbsp reduced calorie margarine, melted Instructions: 1. Preheat oven to 475 degrees 2. To make the crust, combine 1 cup of flour and 2 tsp sugar in a large bowl or food processor. Add 3 Tbsp of chilled margarine and mix with your fingers (or process if in food processor) until mixture resembles coarse meal. Add cold water one tablespoon at a time and mix or process until a manageable dough forms. Press dough into a 9-inch pie plate. Pinch edges to form a decorative crust. 3. To make filling, combine apples 1/4 c. of sugar, cornstarch and cinnamon in a large bowl; toss to coat apples and arrange in prepared pie crust. 4.To make topping, combine oats 5 Tbsp of flour, 2 Tbsp of sugar and melted margarine in a small bowl; sprinkle over apples. 5. Bake until apples are tender and crumb topping is golden brown, about 45-50 minutes. Allow to cool for about 30 minutes before slicing into 8 pieces. 6. Enjoy! |
| Impossible Pumpkin Pie (If in pie pan, it will serve 8 and each serving is 3 points, if in 8x11 pan, it will serve 12 and each serving is 2 points) 3/4 c. of sugar 1/2 c. reduced fat Bisquick 2 Tbsp margarine melted 1 can of evaporated skim milk 2/3 c. egg substitute 15 oz. can of pumpkin 2 1/4 tsp pumpkin pie spice 2 tsp vanilla 1. Preheat oven to 350 degrees. 2. Mix all ingredients in a bowl. 3.Spray the pan with non stick spray. Pour ingredients into pan and bake for 55 minutes or until toothpick comes out clean when inserted into center. |
| Angel Foodcake Bars (makes 16 servings, 2.5 points per serving) Ingredients: 1 pkg of One Step angel food cake mix 1 20 oz can of crushed pineapple including juice OR one 15 oz. can of pumpkin OR a can of lemon pie filling Glaze (optional) 3/4 c. powdered sugar w/ one Tbsp of water, make thinner by adding a few drops of water. 1. Preheat oven to 350 degrees 2. Mix all ingredients. Pour into sprayed 10x15 jelly roll pan. Bake for 35-40 minutes or until it springs back to touch. Cool and cut into 16 pieces. 3.If you want, glaze can be added before cutting. |
| Crustless Pumpkin Pie (4 points for the ENTIRE pie!) Ingredients: 1small can of pumpkin 1 1/2c. skim milk 1/2 c. egg substitute 3/4 c. Splenda 1 tsp cinnamon pinch of nutmeg pinch of ginger 1/2 tsp salt 1. Preheat oven to 400 degrees 2. Combine everything and mix 3. Pour into sprayed pie dish (or 9x13 works too) 4. Place into oven for 15 minutes, then decrease heat to 375 and continue baking for 35-40 minutes. Pie is done when toothpick comes out clean from center The points for this are 4 for the entire recipe. If you cut into 8 pieces, they are .5 points per piece. Serve with Cool Whip (just remember to add those points too!) This is the recipe word for word that one member took off the Lifetime and Maintainers board, they made it with sugar, not Splenda and used the same amount of sugar. They did not put in the nutmeg since they didn't have any. With sugar, they figured it out to 2.5 points per slice. |
