Verna's Chocolate Cake Cake Ingredients: 2 Cups Sugar 2 Cups Flour 2 Stks. Margarine 4 Tbsp. Cocoa 1 Cup Water 1/2 Cup Buttermilk 2 Eggs 1 Tsp. Soda 1 Tsp. Vanilla Icing Ingredients: 1 Stk. Margarine 4 Tbps. Cocoa 1/4 Cup Milk (more if needed) 1 Box Powdered Sugar 1 Tsp. Vanilla 1 Cup Chopped Pecans *In a bowl: Mix together 2 cups of Sugar and 2 cups of Flour. Set aside. *In a pot on the stove: Bring 2 sticks of Margarine, 4 Tablespoons of Cocoa and 1 cup of water to a rapid boil. Pour this mixture over the flour and sugar and stir. Add 1/2 cup of Buttermilk, 2 eggs slightly beaten, 1 teaspoon of Soda and 1 teaspoon of Vanilla. Mix, and pour into a 15 X 10" greased baking dish. Bake at 400 deg. for 20 minutes. Check with a toothpick to see if the middle is done. Have the icing ready when the cake comes out of the oven. *In a pot on the stove: Melt 1 stick of Margarine, 4 Tablespoons of Cocoa, and 1/4 cup of Milk. Bring to a rapid boil. *Take pot off the stove and add: 1 box of Powdered Sugar, 1 teaspoon of Vanilla and 1 cup of chopped pecans. Beat well with a spoon (Add more milk if the icing is too thick) and pour evenly over the hot cake.
