Coconut Macaroon Pie 1 unbaked 9" pie shell 1/4 cup chopped pecans (optional) 2 eggs, slightly beaten 1/2 cup water 1-1/2 cups sugar 1/4 cup flour 1/4 tsp. salt 1 (3 1/2 oz.) can flaked coconut (1-1/3 cups) 1/2 cup butter or margarine, melted (1 stick) Sprinkle pecans over bottom of pie shell. Combine remaining ingredients; pour into pie shell. Bake in slow oven (325º F.) until golden brown, and almost set, about 45 minutes. Cool.
