Fish Tacos With Yogurt-Lime Sauce (serves 4) *NOTE - make the Pico de Gaillo, Sauce and Marinade first. 4 Halibut or Mahi Mahi fillets (1 1/2 lbs.) Marinade Pico De Gaillo Lime-Yogurt Sauce medium-size flour tortillas 1-2 cups cabbage, shredded Pepper Jack (or any other cheese), grated (optional) Chopped Avocado - or Guacamole 1) Marinade 2 garlic cloves, minced 1 jalapeno pepper, minced Juice of one lime 2 tbsp. cilantro, chopped 1/4 cup cooking or olive oil 1 tsp. ground cumin 1 tsp. chili powder 1 tsp. cayenne pepper Black pepper to taste Mix the marinade and set fish to marinate. In a large bowl, combine: garlic, jalapeno, lime juice, cilantro, oil, cumin, chili powder and pepper. Place fillets in bowl, toss gently to coat, cover and refrigerate for 30 minutes. 2) Lime-Yogurt Sauce 1 8oz. container of plain yogurt 2 heaping tbsp. sour cream Tabasco Lime Juice 1 Lg. jalapeno pepper, minced Salt and Blk. Pepper 1 tbsp. Chili Powder Cayenne Pepper In a med. size bowl, mix together 1 sm. container of plain yogurt, 2 heaping tablespoons of sour cream, 4 dashes of Tabasco, minced jalapeno, juice of 1 lime, Salt, Black Pepper, Chili Powder and Cayenne Pepper. Refrigerate 3) Pico de Gaillo 1 Lg. onion, finely chopped 2 or 3 tomatoes, finely chopped 1 Lg. jalapeno pepper, minced 3 cloves of garlic, minced Juice of 1 lime 1 tbsp. Cumin 3 or 4 dashes of Tabasco Salt & Blk. Pepper to taste Mix all Pico de Gaillo incredients in a bowl and refrigerate. Remove fillets from marinade. Be sure to re-season with salt, Pepper and whatever other seasoning you want. Place in hot oiled skillet or on the grill. Sear on both sides, about three to five minutes per side or until done. Assembly: For each taco, place a portion of fish in the center of a warm tortilla.* On top of the fish, place cabbage, Pico de Gaillo and avocado or guacamole and shredded cheese of your choice. Top with Lime-Yogurt sauce or serve it on the side for dipping * warm the tortillas in the microwave for about 30 seconds.
