Boiled Crabs Bathed in Garlic Butter *Recipe courtesy Paula Deen - Doctored up by Jan 1 doz. boiled crabs 2 tablespoons Old Bay seasoning Cayenne & Black Pepper Juice of 2 or 3 lemons 2 sticks of butter Tabasco Finely chopped fresh garlic, 6-8 cloves 1 cup chopped parsley leaves (optional) Clean the crabs, removing lungs, legs and innerds. Remove the claws, then separate and crack each section so that the butter sauce can get into the claws. Break each body in half - and set aside. ***(this makes the crabs easier to eat.) In a pot large enough to hold the crabs, melt 2 sticks of butter, and then add the chopped garlic. * Saute for 2-3 min. (You could used garlic powder). Add Cayenne Pepper, Black Pepper, Old Bay Seasoning, Tabasco, and the juice of 2 lemons. * Taste the sauce before you add the crabs - and adjust for spice and lemon flavor. Then, add the crabs and gently stir to coat. Once they're warm, put the crabs in a large bowl and pour the remaining butter sauce over them. Enjoy with lots of napkins. * 1 doz. large crabs was plenty for 2 people.
