Greek Feta Casserole 2 Cups hot water 3 Ounces macaroni -- elbow 1 egg -- beaten 1 Cup feta cheese -- crumbled 1/4 Cup milk 1 Pound ground pork 1/2 onion minced Salt & Pepper to taste 1 Sm. can sliced black olives or pitted greek olives chopped In a 3 quart saucepan, bring the water to a boil. Add elbow macaroni; reduce heat slightly and cook in gently rolling water for about 10 minutes; drain and set aside. In a mixing bowl, combine eggs, 1/2 cup feta cheese and milk. Add the drained pasta and toss gently. Spread the pasta mixture evenly in an 8x8x2 inch baking dish. In a large skillet, cook the ground meat and minced onion until browned; drain off the fat. Season with salt and pepper. Spread the mixture over the pasta in baking dish. Sprinkle with remaining feta cheese and olives. Bake at 375 degrees for 8 to 10 minutes or until heated through.
