Mama's Rice Dressing * This recipe was adapted from Grandma Frank's Boudin recipe * 2 cups of rice (uncooked) 2 containers of Savoie’s Dressing Mix 1 lb. Ground Pork 3 Onions, chopped 2 lg. Bell Peppers, chopped 1 tbsp. Garlic Powder 3 stalks Celery, chopped 1 Bunch of Green Onions, Chopped 1/2 Bunch of Parsley, Chopped Salt and Red Pepper to taste COOK 2 CUPS OF RICE. Sauté the ground pork. When cooked, add the onion, celery and Bell pepper. Cook until onions are clear. Then add the Savoie’s and cook thoroughly and leave the liquid. Start adding the Rice and Meat Mixture into a large bowl and mix well. Add some of the liquid to add moisture to the dressing. Add chopped green onions and parsley at the end and then Season to taste. FOR A CROWD: 8 cups of rice 4 containers of Savoie’s 1 ½ to 2 lbs. ground pork 4 or 5 onions 3 lg. bell peppers 2 Tbsp. Garlic Powder 5 stalks of Celery 2 bunches of Green Onions 1 bunch of Parsley Salt and Red Pepper to taste. COOK 8 CUPS OF RICE. Follow directions - same as above. Note: It wouldn’t be Thanksgiving or Christmas without Mama’s Rice Dressing.
