God-Father’s Meatloaf * Recipe from co-worker, Randy Petit 2 lbs. Lean Ground Beef 2 Eggs - beaten 1 Can Rotel ¾ Cup Bread Crumbs 2 Cloves Garlic - diced Salt & Pepper - to taste 4 Thin Slices Ham - Plumrose 8 Slices Mozzarella Cheese 32 oz. Ragu Sauce Combine egg, rotel, bread crumbs, garlic, salt & pepper with ground beef. On wax paper, flatten meat into rectangle shape. Arrange ham on top of meat, leaving 1” margin around edge. Place 4 slices of cheese over ham. Carefully roll up meat using wax paper to lift. Seal edges well, place seam side down in baking dish. Bake at 350 degrees for 1 hour and 20 minutes. Place other 4 diagonal slices of cheese on top and pour Ragu over top of meat loaf. Cook long enough for cheese to melt and Ragu to heat up. Serve with noodles and salad
