Jan's Shrimp Mold 1-8oz. Pkg. Cream Cheese Juice of 1 Lemon 1 Can Cream of Mushroom Soup 1-1/2 lbs. Shrimp, peeled 1 cup Celery, chopped 1 cup Mayonnaise 1 cup Onion, chopped 1 pkg. Knox Gelatin Dash of Tabasco Cook shrimp and chop. (A food processor works well for this) Melt cream cheese in pot and add soup. Bring to a boil and add onion, celery and shrimp. Add remaining ingredients. Add 3 tbsp. of water and Lemon juice to 1 pkg. Knox gelatin and mix. Add this to the pot and mix well. Pour into a mold. Refrigerate overnight. Serve with crackers. Note: If you can manage to have a couple of Margaritas while fixing this dish-it comes out better. And, don’t let anyone convince you that this recipe needs Tomato Soup! That’s a whole ‘nother recipe.
