Boudin Stuffed Jalapenos 12 Fresh Jalapenos 1 Link Boudin 4 Strips Bacon 12 Toothpicks Season Salt Take your jalapenos and cut the stem end off, then using a jalapeno corer or apple corer remove the seeds. Remove the casing on the Boudin link and cut it in thirds, and then in quarters. Lightly salt the inside of the jalapenos. Stuff the pieces of Boudin in the jalapenos. Cut the strips of bacon in thirds and place a piece on top of each jalapeno, run a toothpick through it to hold in place (and to keep the jalapeno from falling through the hole when it gets real done). Place the jalapenos in a Chile Grill cooker or similar jalapeno cooker, place on a cookie sheet, and put in the oven at 350 degrees for 45 minutes to a hour (or in the grill until the bacon is done). Notes: The longer you cook the jalapenos, the milder they become. Since the jalapenos are standing upright, you don't have to worry about the filling running out while you're cooking them.
